“What nicer thing can you do for somebody than make them breakfast?” -Anthony Bourdain

And so, as we finish 2024 with much gratitude, I’d love to share one of my favorite recipes with you.

✨Savory Cornmeal Cheddar Waffles✨

1 1/2 cups all purpose flour
1 cup yellow cornmeal
2 tsp sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 teaspoon black pepper (or more)
2 cups buttermilk + more to right consistency
2 eggs
6 Tbs butter melted
2 cups cheddar cheese shredded
½ cup thinly sliced scallions/green onions

Whisk eggs until smooth and then whisk in melted butter. Add buttermilk, salt and pepper and mix.
Measure flour, cornmeal, sugar and baking powder, lightly mixing together on top of the wet ingredients before scooping down to fold together wet and dry to make batter. Fold together until just combined. Don't over mix -the batter should be shaggy, vs smooth.
Add in the green onions and cheese, folding together gently. Don't over mix!!
✨If able, I think the batter is best after resting for 30minutes. If a little extra buttermilk is needed, please add. The batter should be wet.
Heat your waffle maker. I like to use a high setting (but yours may be different - keep an eye on it!)
Grease the waffle maker, then add around 3/4 cup of batter for large Belgian style waffles. Use 1/2 cup for the flatter, less deep waffle irons.
Cook until browned and crispy.
Top with whatever you want.
Devour!

Poached Egg
Bacon
Tomatoes

Sledding conditions are epic right now.
If you’re looking to balance out your trip plans of curling up with a book, tempered with re-provisioning walks to Cherry Republic or Art's Tavern. Snag a couple runs down the Sleeping Bear Climbing Dune and put some roses in your cheeks.

Sleeping Bear Dunes has received accumulating snow over the last few days.

If you are headed to the Dune Climb to sled...

Sled within the sledding area boundary. The area is marked by orange stakes. Staying within the boundary protects the fragile dune environment and other people.

Pets are not allowed on the sledding hill. The dog-friendly area is to the right side when facing the dune.

Sled at your own risk. Those at the top of the hill cannot see you.

A porta-pot is available near the parking lot.

There is a wild, restorative magic in nature walks at this time of year. Most of our guests split their time between experiencing Sleeping Bear Dunes National Lakeshore in winter, maybe a pinch of remote work, then serious downtime by the fireplace in Big Glen or one of the Manitou Condos. Finish the day at The Mill for dinner or stroll to Art's Tavern for tots and gossip. for the win!
