——🔸FALAFEL, JORDAN 🔸————
Who loves falafel as much as we do ? 🧆🥙🥗🍅🌯🥒
Receipt:
“I used half and half of both dried garbanzo beans and dried split fava beans. The beans were soaked in water overnight at room temperature. You need to soak them for at least 10-12 hours. Drain the beans and grind them with fresh parsley, fresh cilantro, garlic and onion. You can use a food processor but I like to use my meat grinder and grind the mix twice as it makes the mix fluffier. Add all the delicious spices you can think off, middle eastern 7 spice mix, cinnamon, Aleppo peppers, cumin, coriander, black pepper and salt. I give the mixture a good 2 hours of rest in the fridge. Before frying, I add both baking soda and baking powder and let it rest again for 10-15 minutes. I form the falafel patties, then sprinkle it with some sesame seeds and into the hot frying oil for 2-3 minutes in batches. I served it in fresh baked pita bread with slices of tomatoes, pickles, hot sauce شطة then drizzled it with sauce طرطور. #فلافل”

———🔸WADI MUJIB , JORDAN 🔸————. Wadi Mujib is a spellbinding canyon that towers above the Mujib River and stretches along 70 kilometers. The Mujib River in Jordan flows into the Dead Sea which is the lowest place on earth. There are many excursions that allow visitors the chance to trek through the water, beneath the towering canyons, and into the Dead Sea itself. Sections of Wadi Mujib also cover the Mujib Biosphere Reserve which is home to a number of rare wildlife species.
