Low-Carb Bacon Cheeseburger Casserole
Ingredients
2 pounds ground beef
2 cloves garlic, minced
½ teaspoon onion powder
1 pound cooked bacon, cut into pieces
8 eggs

Mexican Taco Lasagna

:

1 pound ground beef
1 packet taco seasoning
1/4 cup water
1 can Ro*Tel diced tomatoes with chiles, drained
1 can Nacho Cheese Soup
1/4 cup sour cream
1 cup grated cheddar
12 8-inch soft tortillas
guacamole, cilantro, sour cream for topping, as desired

Directions:

Preheat oven to 350 degrees. Spray a 9×9 baking dish with non-stick spray.
Add the beef to a large skillet over medium heat and crumble as it cooks. Drain grease when cooked through.
Add the taco seasoning and water to the skillet and cook for 2 minutes.
Dump the tomatoes, cheese soup, and sour cream into a medium mixing bowl. Stir in the cooked meat.
Place 3 tortillas in the bottom of the prepared baking dish. Top with 1/3 of the meat mixture.
Repeat layers, ending with a layer of tortillas on the top. Sprinkle the cheese over the top.
Bake for 20 minutes or until hot and melty.
Serve sprinkled with chopped cilantro, guacamole, and extra sour cream, as desired.

Tender and Juicy Garlic Butter Steak Bites
INGREDIENTS:
2 pounds of steak, I used beef tenderloin, cut into bite size pieces
4 cloves garlic, minced
¼ cup butter
¼ cup white wine
1 tablespoon olive oil
1 tablespoon fresh parsley, chopped
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon ground pepper
INSTRUCTIONS:
Cut the steak of your choice into bite-size pieces. I used beef tenderloin, but you can use NY Strip or Ribeye if you’d like. Sprinkle the steak with smoked paprika, salt and pepper.
Heat a large cast iron skillet to medium high. Add in the olive oil, then sear all sides of the steak. Be sure not to overcrowd the pan, otherwise the steak will steam, rather than sear.
Once the steak is seared and reaches your desired temperature when checked with a meat thermometer (I prefer 125F), remove and set aside.
Add the garlic to the skillet, and cook for just about 10 seconds, careful not to let it brown. Then pour in the white wine (or beef broth), to deglaze the pan. Allow ⅓ of the wine to evaporate as you’re scraping up the brown bits of flavor.
Add in the butter and cook for another 2 minutes. Add the steak back in and toss in the butter. Garnish with parsley and serve.
Store leftovers in the fridge for a few days or freeze in an airtight container.

CROCKPOT BEEFY POTATO TACO CASSEROLE
Ingredients:
1 lb ground beef
2 cloves garlic minced
1 oz packet taco seasoning
10.5 oz cheddar cheese soup
4 cups potatoes sliced
2 cups shredded cheddar cheese
1 cup beef broth
Instructions:
Brown your ground beef with garlic and drain
Place your potato slices in the bottom of a slightly greased 6-quart crock pot
Spread your ground beef evenly on top of your potatoes
Sprinkle your taco seasoning on top of everything
Spoon your soup evenly on top
Sprinkle your cheese evenly across the top of the everything
Gently pour your beef broth evenly around your crock pot
Cover and cook on low for 4-5 hours or high for 2-2.5 hours
If desired and using a oven safe crock, place in broiler on high for approximately 90 seconds to brown cheese on top
Let it cool for 10-15 minutes before serving.

Steak Fajitas 🫑🌶
Ingredients
2 pounds skirt, flank, sirloin, or hanger steak sliced into ½ inch strips
1 red pepper deseeded and sliced into thin strips
1 green or yellow pepper deseeded and sliced into thin strips
1 medium onion peeled and sliced into thin strips
3 tablespoons olive oil
1 tablespoon lime juice
1/2 teaspoon chili powder
1 teaspoon ground cumin
pinch cayenne pepper
1/2 teaspoon Kosher salt
1/2 teaspoon fresh ground black pepper
2 cloves garlic minced
6-8 tortillas warmed
Instructions
Place the steak into a sealable bag. Place the peppers and onion into a separate sealable bag. Add the olive oil, lime juice, chili powder, ground cumin, cayenne pepper, salt, black pepper, and garlic to a jar with a screw top or tight fitting lid. Shake until well combined. Pour ⅓ of the marinade over steak, ⅓ of marinade over vegetables and reserve the remaining marinade in the jar for using when cooking the steak fajitas. Seal the bags tightly and refrigerate for one hour to overnight.
When ready to cook, heat a large skillet over medium-high heat. Pour the vegetables into the skillet and cook until just tender crisp, about 5 minutes. Remove the vegetables from the skillet to a plate and add steak strips to the same skillet. When the steak is cooked throughout (about 7-10 minutes), add vegetables back to the skillet along with the reserved marinade..Serve with warm tortillas and desired optional garnishes.

Turkey pockets : Deli turkey
Turkey filled with stove top stuffing. Mashed potatoes and green bean casserole as sides.
Used Knorr packet to make turkey gravy.
Roasted turkey flavor.
When we went to the deli, we asked for dinner thick slices of the turkey!
I’ve seen them thinner which I may try.
this is deli turkey (honey maple, it was on sale).
He asked for dinner thick slices.
He cooked the stove top and stuffed these.
Put the gravy over (left gravy on stove for those who wanted more).
Baked the dish for 25 to 30 mins @350 degrees (until it was nice and hot).
