These are borrowed from July, but Happy NYE from the McCall clan!
We kept things pretty traditional (for us lol) and somehow managed a smorgasbord of finger foods in the air fryer--ie wings, jalapeΓ±o poppers, potato skins, bacon-wrapped lil smokies and cucumbers.
Cheers to a year chock-full of potential π«π€β€π₯°π₯
It's COLD! This cabbage soup was the thing my throat needed. But I can't ever leave a recipe alone...
-Started by frying some chopped bacon with the onion/garlic
-Traded tomatoes for carrots
-Add ginger, red pepper flake, Paprika to spices
-Add shredded Rotisserie to make it a meal
-Sprinkle garlic pita chips on top
Cabbage + bacon = π€€
The best part is, all these ingredients were leftovers from other meals. ππ€«

Left the cute little town of Mountain View, Arkansas after a long pause. It was a punishing climate of around 100 degrees even high up in the Ozarks, so we stayed in more than usual save for the tacos and grocery shopping. π« π₯²
Glad to safely come to rest where we can enjoy some time outside again!
There's even a shaded playground, pretty sure we know where we'll be spending our evenings π
Another week of planning, cleaning, and reorganization and we'll be back in the SWING!

Monday was a headache, as they tend to be sometimes. These made it a little lighter.
Stay silly friends, life is too short.
Big guy turned 3 this weekend! π₯³π©΅π
Way too smart- counts to 20 and knows his alphabet, shapes and numbers by sight. Knows when someone needs a hug. Helps pickup stuff off the floor and has started helping make his food and do dishes, he wants to do it all himself π€π₯²π

Sooo I decided dump a whole lot more humor! This is how we cope until then ππ₯ΉπΊ
It's been a busy week. Don't forget to add a little tomfoolery! β±οΈ
Leftover steak tacos, allow me to break down one example of the construction of a proper "street taco" π
1. Tortilla. Flour tortillas toasted in a dry skillet, or if you can find fresh corn ones, even better, but you will likely want to double up. Grocery store corn tortillas are usually crumbly and (imho) are better suited for other dishes.
2. Fresh onion. White or red, depending on preference. The onion lays on the tortilla before the meat so that the juices soak into them and combine those lovely flavors.
3. Savory meat. Flavor any meat with Adobo and/or Sazon seasoning packets. Chorizo is also π€
4. Fresh Cilantro, in copious amounts or to your liking
5. Tomatillo hot sauce or green salsa. Bandito's is the best bottled green hot sauce so far π
6. Squeeze of lime. The citrus will dilute the hot sauce and disburse it into the taco π₯Ή

Time can't be taken back, you can't get more from Amazon, can't make more with all the money in the world. Enjoy your moments with the people that matter. Set aside time for the things you always said you'd do, and DO THEM. If you want other things more, you won't. It's that simple.

Our little tabletop grill doesn't just do boat burgers!
These are a classic family favorite: Hawaiian Teriyaki Chicken Sammy's
Stupid simple ingredients:
Boneless Chicken Thighs
Teriyaki Marinade
Swiss cheese
Pineapple slices
Mayonnaise
Potato or Hawaiian Buns
Marinate the chicken in Teriyaki for 1-48 hours
Slap them on the grill or cookie sheet
Grill medium heat/bake @ 350 until internal temp-165
Top with cheese and Pineapple slices (can grill these separately or bake on the last few min)
Toast or grill buns (optional)
Mayo your buns on both sides because you deserve it
Eat and be π
