Jonathan has a mystery tasting from a beaker with mad wine scientist Ryan Opaz, who runs a wine shop-lab-museum in Porto. The wine Jonathan tasted was from a demijohn of 100+ year-old Quinado from the southern Lisbon area of Portugal. There is no known producer or specific region, but it likely has a healthy dose of Moscatel in it. While most people assume 30-40 grams of sugar per liter, this wine has 120 grams—about the same as a can of Coca-Cola! The bitter alkaloids of the quinine mask the main sweetness. This was a staple in Portugal for many years as a prophylactic against malaria. Delicious! 😍
