Venison Jalapeño Cheddar Summer Sausage Recipe 🦌🧀🌶️

Ingredients:

2 lbs ground venison 🦌
1/2 lb ground beef or pork (optional for fat) 🌟
1/2 cup shredded cheddar cheese 🧀
2 jalapeños, finely diced 🌶️
1 tbsp curing salt 🧂
1 tbsp smoked paprika 🌶️
1 tsp garlic powder 🧄
1/2 tsp black pepper 🧂
Directions:
1️⃣ Mix the Meat: Combine all ingredients in a large bowl. Knead thoroughly to mix. 🦌🧀🌶️
2️⃣ Shape Logs: Form into 2-3 logs, wrap in plastic, and refrigerate overnight. 🌟
3️⃣ Cook: Smoke or bake at 200°F until internal temp reaches 160°F (about 4 hours). 🔥
4️⃣ Cool and Slice: Let cool completely before slicing. Perfect for snacks or charcuterie! 🍴🧀

Sweet and Spicy Glazed Venison Steaks 🦌🌶️

Ingredients:

4 venison steaks (about 6 oz each) 🦌
2 tbsp olive oil 🫒
3 tbsp honey 🍯
2 tbsp soy sauce
1 tbsp sriracha or chili sauce 🌶️
1 tsp garlic powder 🧄
1/2 tsp black pepper 🧂
Directions:
1️⃣ Marinate the Steaks: Mix honey, soy sauce, sriracha, garlic powder, and black pepper. Coat venison steaks in the mixture and marinate for 30 minutes. 🌶️🍯
2️⃣ Sear the Steaks: Heat olive oil in a skillet over medium-high heat. Cook steaks for 3-4 minutes per side or until desired doneness. 🦌🔥
3️⃣ Glaze and Serve: Drizzle remaining marinade over steaks while cooking. Serve hot with roasted vegetables or mashed potatoes. 🍽️

Throwback Thursday

This image, pulled from our archives, shows two men crouching near their brown bear kill in the 1960s.

Soon, the bear will be sealed, and a tooth will be extracted by an Alaska Fish & Game official. A tooth, usually a premolar, was obtained for age determination whenever possible. A premolar was chosen because it is easy to pull, and a hunter is more willing to let it be pulled than other teeth since its removal does not detract from the skull's appearance.
