🍲🐔 Chicken Soup with White Beans and Kale 🥬🍲
Warm up with this comforting Chicken Soup with White Beans and Kale, a weeknight wonder that's easy to make and can even be prepared in a crockpot!
📋 Ingredients List:
🥄 1 tablespoon oil
🍗 1½ pounds boneless, skinless chicken thighs
🧅 1 yellow onion, peeled and diced
🥔 1 pound red potatoes, cubed
🌶️ Garlic pepper or lemon pepper, to taste
🔥 Crushed red pepper, to taste
🥫 15-ounce can of cannellini beans
🥣 6 cups water or chicken stock
🥬 1 bunch Lacinato kale, stemmed and roughly chopped
🥛 ¼ cup heavy cream, optional
🍋 Juice of 1 lemon
🌿 Freshly minced parsley
📝 Instructions:
1️⃣ Heat oil in a soup pot. Season chicken with salt and pepper, and cook for 5 minutes on one side.
2️⃣ Flip chicken, add onion, potatoes, garlic pepper, and crushed red pepper. Cook for 5 minutes.
3️⃣ Add beans and water/stock, bring to a boil, then simmer for 45 minutes.
4️⃣ Remove chicken, shred it, and return to the pot.
5️⃣ Add kale and heavy cream, simmer until kale wilts. Finish with lemon juice and parsley.
👩🍳 Crockpot Version:
Combine all ingredients except kale and cream in the crockpot.
Cook on high for 3–4 hours or low for 7–8 hours.
Add kale halfway through cooking.
Stir in cream before serving.
💡 Tips:
For a vegetarian version, omit chicken and use vegetable stock.
Adjust the amount of garlic pepper and crushed red pepper to your taste.
Serve with crusty bread for a complete meal.
