When visiting the Casco Viejo area of Panama City, a must do foodie experience is to dine at Fonda Lo Que Hay which has been recognized as a World’s Best 50 Latin America Discovery restaurant! Fondas (small traditional food taverns) are to Panamanians what coffee bars are to Italians. At Fonda Lo Que Hay, Chef José Olmedo Carles Rojas mainlines in creative versions of Panamanian traditional dishes, served in a corrugated metal, neon-lit dining room that has all the buzz of a cocktail bar. Menus change regularly to spotlight local produce but a signature dish of toasted yuca with tuna carpaccio and onion ceviche is always on offer, for good reason.

When visiting the historic Casco Viejo in Panama City, part of the Old Quarters experience is the luxury boutique American Trade Hotel. You will fall in love with the contemporary style, Art Deco design and old-world spirit. The refurbished 1917 built five-storey stucco building once housed a bank and department store and, for a time, was a squat for local drug-dealing gangs! One of the interior walls is decorated with replicas of their graffiti.
