The one day shoot highlighted Larkspur Grill, the eccentric and unique lobby, and the Lemon Drop Pool Bar. Chef Eric has done some pretty incredible work, this feature is well deserved. This is Chef Nico, one of our many talented culinary gurus at . Nico's father was born in Puerto Rico, so he grew up with a strong influence of his Puerto Rican heritage. He's visited Puerto Rico over a dozen times and has incorporated the vibrant and rich traditions into his cooking. His passion for preparing authentic Latin dishes has led him around the world to experience the local flavors and unique tastes from countries such as Columbia for their well-known Bandeja Paisa, the Dominican Republic for the famous Mangú or Sancocho, and even Spain to experience all of the delicious variations of Paella.

In spirit of , we've asked Nico to prepare one of his most cherished dishes. He's created a mouth-watering plate that includes roasted Pernil, Arroz con Gandules, and Tostones. Pernil is a typical Christmas dish in Puerto Rico and other Latin American countries. We can almost taste the love that went into preparing this food. Thank you Chef Nico for sharing a little piece of your heritage and talent with us!

That’s a wrap! Last week we had so much fun celebrating and featuring our “Heart of the House” heroes on all Evo social media channels. We sincerely appreciate everyone who participated in our campaign, we’re so grateful to have you on our team!

The property teams have gone above and beyond to show genuine appreciation for the hard work and daily dedication demonstrated on a consistent basis. Meet Anahi, Housekeeping Manager at Hotel Paseo!

Here are some thoughts she shared on what it means to her to be a housekeeping leader!

"The Housekeeping team has one of the most challenging responsibilities in the hotels, especially during the COVID-19 pandemic. [Intl. Housekeeping Week] is a time that the team looks forward to every year. It provides the entire hotel a chance to recognize the team and demonstrate to them how vital and appreciated they are."

"I am very proud to be part of Housekeeping Department. Being able to earn their trust and be a supportive leader to them is important to me. I take pride in seeing them as individuals that can come to me for any questions or help either to perform their job or on a personal situation. It is one of the most rewarding feelings to be able to make an impact in my associates’ lives."

Meet Ms. Judy, our Housekeeping extraordinaire! She's huge part of Hotel Adeline and leads the team with her voice and energy. She's full of fire and will not settle for anything below the best. She's very outspoken and does not limit herself to just housekeeping, but is dedicated to this hotel and company in general. In honor of , let's get to know July some more!

Q: What's your most memorable moments working in hospitality?
A: Meeting the gentleman from India that stayed here. He was here for months and it was always great to see him. He was very knowledgeable and we would share conversations about home (India) which I have some very close friends from. We got to be good friends, and he would request me to take care of his room.

Q: What is your favorite thing about housekeeping?
A: After 50 years of nursing, I like things clean. This is a good fit for this chapter of my life, the detail and pace, still meeting with people.

Q: What excites you the most about Evolution as we continue to “evolve”? A: This hotel. Its so unique and I have traveled all over, but there is something about this hotel. Its just special and has a good atmosphere. It just feels good to be here.
