Over my long career at New World Home Cooking I take pride in the fact that I can cook as good as anybody’s grandmother. I don’t care what ethnicity you are. Bring it on. I learned to make these kasha varnishes while working at the Empire deli in Boston back in 1982-3. They are real.

"Chef Ric Orlando's tour of Sicily was an awesome experience! We signed up because of the promise of great food and drink. Also the scenery was stunning--the cliffs of Taormina overlooking the turquoise sea, Greek ruins and temples, mountaintop villages, and the energy and Old World beauty of Palermo. The cooking classes and hands on experiences were incredible and we learned things that we have brought back to our kitchen at home. But one of the best parts of the tour was the companionship that developed among us all as we ate and sipped and oohed and aahed our way acorss Sicily. We've been on many beautiful trips in recent years, but Ric's Sicily tour was truly a trip of a lifetime!"

Frank Guido’s Little Italy totally rocks the Calamari and Clams. We got it GF- it’s coated in rice flour which is how we did it at New World. I actually prefer it. It’s light but perfectly crisp. Mm mm.
