Austin, Texas BBQ Tour Day 2

2nd Stop:📍Franklin’s BBQ
Parking: Arrived at 9:20am (raining). We found parking immediately in a small lot behind the restaurant. Street parking is also available. We waited in the car for the rain to stop, maybe 15 min. Then we decided to join the line outside.
Outside: There’s a few picnic tables outside on the street and outdoor seating on an upstairs screened in patio. The line starts at the front door and weaves under and overhang and down the side of the restaurant. At 9:35am we were #12 and 13 in line. There are folding chairs available, first come first serve. Some people also bring coolers. We met a really nice Australian couple visiting family and we chatted with them for over an hour.
Ordering Process: At 10:30am a lady came out to jot down what we planned to order. The doors opened promptly at 11am by the man himself, Aaron Franklin. That was pretty cool. You then weave around the restaurant to place your order at a counter where there is a lady slicing and preparing whatever you tell her you want. It’s placed on a tray and you select your sides. It then goes to the register where you pay and pick up your tray. Everyone was so nice.
What we ordered and what we thought:
Lean and fatty brisket - This brisket was spectacular. The bark had so much layered flavor, it was fantastic. Our favorite was the fatty. Melt in your mouth. 10/10.
4 bones/pork ribs - meaty and flavorful. Tender. 10/10.
Jalapeño and cheese sausage link - Not as hot temperature wise as we would have liked. The cheese was creamy and melted. Not a disappointment, but not our favorite. Probably wouldn’t order the sausage again. 6/10.
1/4 Ib pulled pork - not my favorite because they squirted a peppery-vinegar sauce on it before serving. Otherwise the pulled pork was the same as you can get anywhere. Not bad, but not spectacular. 6.5/10.
Pinto Beans - The beans had some meat in them. Strong Tex-Mex flavor. They packed some heat. Overall, a solid side with a flare. 7/10.
Sweet Tea - 10/10. So far Texas has some great sweet tea.

Not every trip has to be “epic” to be fun!
We took a quick little trip to Austin, Texas to experience true Texas BBQ! Jason being the BBQ fanatic he is!

Arrival Day | First stop,📍Terry Black’s BBQ
Parking Lot: Decent size, full even at 2PM on a weekday. We found a spot right away. Free.
Outside: Lots of seating outside plus large smokers working hard to pump out 300 briskets a day!
Ordering Process: When you walk in, you get in a line that weaves around to the sides where you select your sides cafeteria style. You then take your tray of sides to a register where they slice and weigh your meat selection(s).
Food: Traditional bbq offerings, plus a large selection of beer.
What we ordered and what we thought:
Lean and Fatty Brisket - very, very good. Great flavor profile. Moist. 10/10.
Beef Rib - Meh. For the money, this was not worth it. Lots of fat. Very little meat. Ok flavor, but overall would not order this again. 4/10. Disappointing.
Green Beans - cool, and a little undercooked. Good flavor. 5/10
Mac and Cheese - Typical Mac and cheese. No smoke flavor which is a bummer. 6/10.
Cole Slaw - The coleslaw was pretty decent. No onions which was nice. 8/10.
Cornbread - eh, it was ok. Nothing special. 7/10.
Sweet Tea - 10/10.
