It's time! 🇮🇹
Catania Cathedral, dedicated to Saint Agatha, is a Roman Catholic cathedral in Catania, Sicily, southern Italy. It was the seat of the Bishops of Catania until 1859, when the diocese was elevated to an archdiocese, and since then has been the seat of the Archbishops of Catania.
The cathedral has been destroyed and rebuilt several times because of earthquakes and eruptions of the nearby Mount Etna. It was originally constructed in 1078-1093, on the ruins of the ancient Roman Achillean Baths, by order of Roger I of Sicily, who had conquered the city from the Islamic emirate of Sicily. At the time it had the appearance of a fortified church (ecclesia munita).
In 1169 it was almost entirely destroyed by an earthquake, leaving only the apse area intact. Further damage was caused by a fire in 1169, but the most catastrophic event was the 1693 earthquake, which again left it mostly in ruins. It was subsequently rebuilt in Baroque style.
Today, traces of the original Norman edifice include part of the transept, the two towers and the three semicircular apses, composed of large lava stones, most of them recovered from imperial Roman buildings.Have you always wanted to travel to Italy, but never actually planned it? Our is Donna Franca's ( Quiche)!
For Italians, this is the quintessential Easter dish. Easy to make ahead, easy on the eye & perfect for feeding a crowd

• 500g Puff Pastry
For the filling
• 1kg Swiss spinach or spinach (if using frozen spinach, you’ll need about 2kg; thaw and squeeze out, then add in step 4)
• 1 onion, peeled and finely chopped
• 2 tbsp olive oil
• 250g ricotta
• 150g full-fat Greek yoghurt
• 5 eggs (all but 1 optional)
• 50-75g finely grated parmesan
• Nutmeg, grated
• 1 handful breadcrumbs

HOW TO MAKE:
Heat a large pan for which you have a lid on a medium-low flame, and add the spinach stalks. Cover and leave to steam, shaking occasionally, while you chop and wash the leaves (if you have a thin-based pan and are worried about it sticking, add a splash of oil). Add the spinach leaves to the pan, cover and cook, shaking occasionally, until wilted.
When cool enough to handle, transfer the spinach to a clean tea towel or a piece of muslin, and squeeze out as much liquid as possible. (If using fresh spinach, chop and cook it all together. Frozen spinach, on the other hand, should be defrosted and squeezed out.)
Heat the oil in a wide pan and fry the chopped onion until soft but not coloured. Add the squeezed spinach and toss to mix with the onion and oil. Season with salt and nutmeg, then leave to cool.
Drain off any liquid from the ricotta and yoghurt, then mix. Add one egg, beat well, then stir in the parmesan and a little nutmeg, and season.
Lightly grease a deep 24cm-wide tart tin, and heat the oven and a baking tray to 200C (180C fan)/390F/gas 6. Divide the pastry into six equal pieces and cover so they don’t dry out. Combine two pieces, roll into a large ball, then roll out or stretch on a lightly floured surface until it’s as thin as you can get it and large enough generously to line the tin.
Lay the pasty into the tin, allowing the excess to overhang the sides, then brush all over with oil.
Roll out the third piece of pastry as thinly as possible, cut it to the size of the tin and lay on top of the pastry base. Oil and repeat with a fourth piece of pastry, then oil the top layer and scatter over the breadcrumbs.
Spoon the spinach on top of this, then make four wide divots in the greens. Crack an egg, if using, into each, and season.
Carefully spoon the cheese on top, trying not to push it down too hard on the eggs so the yolks stay intact. Roll out the penultimate piece of pastry, brush with oil and lay it on top, then roll out the final piece and stretch this over everything, to enclose. Press the edges together to seal, then trim and crimp (watch a video online if you’re not sure how to do this). Cut several slashes in the top layer, to help the pastry cook through, make a small hole in the centre to let steam escape from the filling during baking, then brush with more oil.
Bake for 45-55 minutes, or until golden, then remove and leave to cool to room temperature before slicing and serving.

In ancient Rome, tens of thousands gathered at the Colosseum to watch enslaved men, condemned criminals and wild animals fight to the death. These grisly gladiator clashes required great feats of engineering: To make caged creatures and prize fighters emerge from underground as if by magic, the Romans devised a labyrinth of secret tunnels beneath the arena’s wooden, sand-covered floor.
These underground structures have remained exposed to the elements for more than a century, enabling the millions of tourists who visit the Colosseum each year to see them up close, according to Reuters. Now, the Italian government has pledged €10 million (around $12 million USD) toward the installation of a new, retractable floor that will restore the amphitheater to its gladiator-era glory.
“We want to give an idea of how it was, and we are seeking proposals from around the world,” Alfonsina Russo, director of the Colosseum, tells the Times’ Tom Kington.
Per BBC News, architectural designs for the ambitious renovation are due by February 1. Italian officials say they hope to complete the project by 2023.
During the four centuries that the Romans used the Colosseum, the hypogeum, or network of underground tunnels beneath the arena floor, resembled a “huge sailing ship,” wrote Tom Mueller for Smithsonian magazine in 2011.
The structure consisted of staging areas, ramps, pulleys, ropes and other mechanisms that allowed workers to create a seamless show aboveground. Engineers even devised an underground elevator of sorts that lifted lions, bears, leopards and other caged wild animals into the arena.

Sugo all'amatriciana, is a traditional Italian pasta sauce based on guanciale, pecorino cheese from Amatrice, tomato, and, in some variations, onion. Originating from the town of Amatrice (in the mountainous Province of Rieti of Lazio region), the Amatriciana is one of the best known pasta sauces in present-day Roman and Italian cuisine. The Italian government has named it a traditional agro-alimentary product of Lazio.

RIGATONI ALLA AMATRICIANA
INGREDIENTS:
• 1 medium, finely chopped onion
• 2 garlic cloves, finely chopped
• ⅓ cup of finely chopped celery
• ⅓ cup of finely chopped carrots
• 2 tablespoons of finely chopped basil
• ⅓ cup of olive oil
• salt, pepper, garlic (to taste)
• ½ cup of guanciale (cured pork cheek)
• 2 cans of crushed plum tomatoes
• ⅓ cup of white house wine
• 1 pound of bucatini pasta

HOW TO PREPARE:
In a medium-sized pan, pour in all the ingredients (except for the wine and tomatoes), and cook over medium heat. Sauté until everything is light golden brown. Stir constantly. Pour in the wine once the ingredients start to sizzle. Allow the wine to evaporate, and then add the tomatoes. Again, stir constantly and boil for two hours. Boil 1 pound of bucatini pasta until they are “al dente.” Strain, place them in a large bowl, and toss with the warm sauce. Sprinkle ½ cup of grated Pecorino cheese over the rigatoni.

The Fish Market is located at the entrance to the ancient village of Gallipoli and is certainly one of the travel experiences to do during a holiday in Salento.
Not only selling quality fish, but also a must for tourists looking for an authentic way to live and breathe the Salento life. If you arrive here early in the morning, you will be able to attend the traditional fish auction during which the best catch is “contested” between restaurateurs and customers with offers, often shouted loudly.

Octopus and potato salad is a favorite dish all along the Italian coast

INGREDIENTS
• 2 pounds (1 kg) octopus, cleaned
• 2 medium-large potatoes, washed but unpeeled
• 1/2 cup (125 ml) dry white wine
• Handful of parsley leaves, chopped finely
• Juice of 1 lemon
• 1/4 cup extra-virgin olive oil
• 1 stick of celery, thinly sliced (optional)

HOW TO MAKE:
The day before planning to cook the octopus, put it in the freezer to freeze completely. The next day, let it defrost before cooking.
Place the potatoes whole and unpeeled in a pot of cold water and bring to the boil. Cook until tender (a knife should slip through it easily), about 20 minutes. Drain and let cool before peeling and chopping into 1/2-inch cubes. Set aside.
Heat a heavy-bottomed pot or casserole dish over high heat. Add half the olive oil and brown the whole octopus in the pot, a few minutes. Pour over the white wine and cover. Turn flame down to lowest heat available and let simmer about 45 minutes (or until very tender—poke it with a fork to check and if not yet tender enough, leave it for a little longer) and let it cool in the pot until tepid. Remove, saving the liquid (as it is delicious), drain on paper towels, and when cool enough to handle, peel off the skin by gently rubbing with your fingers (baby octopus won't need this treatment) and chop into pieces about 2 inches (5 cm) long.
Toss the octopus and potatoes together with the parsley, lemon juice, the rest of the olive oil, and the thinly sliced celery. Add a spoonful or more of the pan juices and salt and freshly ground pepper to taste (it's usually already quite flavorful). Eat at room temperature or chilled.

Our is Donna Franca's Portuguese Serradura
Serradura dessert or Sawdust pudding is one of the easiest traditional Portuguese desserts to make. A crowd-pleaser, this simple no-bake Portuguese dessert is made with Maria biscuits, condensed milk, whipped cream, and vanilla extract.

INGREDIENTS:
• 1 cup (250ml) heavy whipping cream
• ¼ cup (60ml) sweetened condensed milk
• 16 to 18 Marie Biscuits
• ½ teaspoon pure vanilla extract
• Optional chocolate shavings, strawberries or fresh mint for garnish

DIRECTIONS
Put the biscuits into a blender and pulse until they’re fine crumbs. If you don’t have a blender, you can put the biscuits into a medium-sized plastic bag, and pound them with a rolling pin
Pour the heavy cream into a bowl, then the vanilla extract and whip until it starts looking fluffy
Add sweetened condensed milk and continue whipping until you’ve got stiff peaks. Be careful not to overmix or you’ll end up with sweetened butter
In individual size glasses, alternate layering the whipped cream and biscuit crumbs
Begin and end with the cream and depending on the size of your serving dish, aim for between 5-7 layers
To make it easier, spoon the cream it into a plastic bag and cut off one of the bottom corners for easy spreading
End on the whipped cream and sprinkle a light layer of the crushed biscuits as garnish
Cover the desserts with a plastic wrap and refrigerate for 3-4 hours or preferably overnight to allow the cookies to soften
Remove from fridge 15 minutes before serving and garnish, if desired top with chocolate shavings, strawberries or fresh mint
