The egg picture is an example of my first blend. In 1978 we had guests coming to the farm for breakfast. Since I considered my breakfasts boring, I went out to my first herb garden and picked a handful of herbs to perk up my scrambled eggs. The guests raved and wanted the recipe (which of course I didn't have since I just threw in the herbs). Over the next six months I very carefully measured and tweaked the recipe with first fresh and then dried herbs. Upon their return visit, I proudly distributed a recipe to each guest. They took one look and stated that they would never know what to do with that many herbs and asked if I would make a blend and sell it to them. That started Tjarks Blends which evolved into Knot Enough Thyme.

Just about ready for the Grand Opening. I am amazed at the number of products that we will be selling. These are just a few:

Opening this is one of the items on my bucket list. Offering healthy foods and indulgences has been a lifetime goal...so blessed to be able to fulfill it.

Here are some pictures of the store front, teas, dips, jellies and blends, and our gourmet salts. The last picture is of my wonderful workers from Prospect, a vocational center for challenged individuals. They are Donald, Rita (their supervisor) and Mary. I couldn't begin to run the business without them. Having the new packaging facility behind the storefront is another big plus. Our Grand Opening is June 6th.

We will be opening in June with lots of new items, antiques, soaps, jams, gourmet salts, and wonderful teas. Keep you posted for the grand opening.

Good Morning All,

80 degrees yesterday and same today. Garlic is taking off and is about 6 inches high. Lettuce & onions go in tomorrow---yeh!

Knot Enough Thyme is having growing pains. We rented a storefront (and rear) in Smithville. Packaging and storage is our main goal at this time, but a small retail area up front will happen too. The building (117 Market) has been empty for a couple of years, so there is considerable cleaning to be done. The setup is perfect for KET and we are excited. Hope to paint next week and lay a laminate floor the following week.

Just posted the Mistletoe Show videos. These are the my first video attempts so they are not too great. Also, I have been reminded to post the Spaghetti squash recipe. So here it is:


One Spaghetti Squash (I split it, take the seeds out, turn cut side down on a cookie sheet, and add 1/4 cup water. Bake at 400 until a fork punctures easily.)

1/2 # Italian sausage.
1/2 med onion diced
1 small green pepper chopped
1 tomato chopped (I have used Rotel diced tomatoes with herbs and like it better than plain tomato)
1 to 2 T. Tjarks Pasta Blend
4 triangles of Laughing Cow Light Swiss Cheese

Take a fork and gently remove the Spaghetti Squash from shell. Save shell. Set aside.

Brown sausage. I use about 2 T. olive oil with herbs to do this. Add onion about 1/2 way through browning.
Next add green pepper and cook for about 2 minutes.
Stir in the tomatoes and Pasta Blend. Add the cheese, turn heat to medium low and stir until cheese melts.

Gently stir in squash. When heated through, place back into shells to serve. They are a disposable serving dish.

For even more flavor, top with a mild white cheese and put in broiler for a couple minutes.

Enjoy!

Getting ready for two Christmas shows in Cookeville, TN. Got the new brochures today and they are great. Hail took all the herbs, so starting over again.

Finally got to the basil. Froze it in vegetable broth in ice cue trays. Ready for soups, stir fries and anything else we can come up with this winter. Picked a peck of peppers and need to find some creative ways to use them.

Did a really fun thing while some friends were visiting. Made some herbal biscuits. This is what they looked like and were so easy to do.


One pkg. GRANDS biscuits (I used the frozen and really liked the results.)
Fresh herbs – Tips of thyme, rosemary, flat parsley leaf, tarragon, sage seemed to work best.
Boil a cup of water in the microwave, remove and put herbs in the water for about 3 to 5 seconds depending on the thickness of the herb. Immediately, remove and put in ice water. Dry on a paper towel (one on bottom and one on top).
Beat one egg and after arranging the biscuits in a pan, brush the egg on top of each biscuit. Gently, pat an herb or two on each biscuit and brush with the egg again.
Bake according to biscuit directions and enjoy.

Cukes are great this year.  Hope the dills are as good as they look.

Happy 4th. Try this next week with some fresh broccoli. Fast and delicious.

Broccoli - Savory Seasoned
1 # Broccoli cut into spears
3 T Olive Oil (use the herbal oil for more flavor)
1/2 c. Chicken Broth
1+ T Savory Seasoning
Mix oil and seasoning well in large skillet on med/high heat. Saute spears for about 3 minutes. Add broth, bring to boil, cover and simmer on low for 3-5 minutes.
