Here’s an awe-inspiring tale of an individual who has overcome seemingly insurmountable odds.

Tobi Sample, having battled stage 4 cancer a decade ago, has just accomplished a remarkable feat - reaching the summit of Kilimanjaro as a member of Africa New Life's 18-person team.

But Tobi's journey wasn't just a personal endeavor. The climb was also a noble effort to raise $160,000 for a food program and student scholarships in Rwanda for Africa New Life. MONGOLIA DUMPLINGS FOR NEW YEAR.

In 2006 Amy and I (Eddie Frank) went on an exploratory expedition across Mongolia. We were scouting a trip for the Solar Eclipse which was to pass across Western Mongolia two years later. What we found there blew our minds. Spectacular landscapes and an amazing mix of cultures, Mongolian and Kazakh alike. We also discovered something incredible – the food.

One day in a village we stopped at a small family eatery for lunch. That’s where we discovered BUUTZ (sounds like “boots" but they taste a lot better.) BUUTZ are Mongolian Dumplings filled with lamb or sheep meat. Totally delicious . Amy immediately went to the kitchen to find out what they were. The mom taught her how to make them. Here’s the recipe, translated as best as we could from Amy’s memorable encounter. It’ll make a great New Year’s meal.

BUUTZ
Mongolian Dumplings

Ingredients

9 oz flour
5 liq.oz water
11 oz ground lamb
1 onion
2 garlic gloves
3-5 tsp of water
Salt
Pepper

Prepare the Filling:

1. Chop the onion into tiny cubes.
2. Finely Chop garlic cloves .
3. Mix lamb, garlic & onion .
4. Continue adding water until the mixture is smooth.
5. Add salt and pepper to taste.

Prepare the Dough:

1. Mix flour and water until the dough is malleable.
2. Roll the dough into shape of a a bread loaf.
2. Let the dough sit for 15 minutes.
3. Cut the dough into thick slices, ¾ inch thick.
4. Use use a round cutter (3-inch diameter) to make rounds.

Shape the Dumplings:

1. Hold one of the round dough pieces and using a teaspoon, place one teaspoon of lamb mixture in the middle of the dough.
2. Fold the dough round in half and press the two edges together.
3. When pressing the edges together, they should look like braids.

Cooking:

1. Boil water with a pinch or two of salt.
2. Once boiled, place the dumplings into the water.
3. Let them sink to the bottom and boil them for 10 minutes.
4. They are ready when they rise to the surface.

Serving:

Mongolians serve the BUUTZ either by themselves or with a side salad or vegetables. One person can easily eat 6 dumplings or more, depending on hunger level.
