Biologically-aged Sherry matures under a flor yeast layer, up to two centimeters thick, imparting distinct characteristics exclusive to Fino and Manzanilla styles!

✨ Fino Sherry, pale and dry, is elegantly shielded from oxidation by the flor, offering crispness with notes of almonds, green apple, and a subtle saline quality—a perfect aperitif.

✨ From Sanlúcar de Barrameda, Manzanilla captures the essence of the sea, enhanced by the Atlantic Ocean's influence on the flor. Its briny character pairs exquisitely with fresh seafood.

Flor yeast preserves and enhances the wine, contributing to a unique flavor profile of yeast aroma, apple notes, and subtle minerality that's impossible to resist.

Sherry, a fortified wine from the Jerez region in southern Spain, offers a diverse array of styles that delight the palate with their unique characteristics. Let's explore seven of these styles:

🍷 Manzanilla and Fino: Light and delicate, aged under flor yeast, perfect with artichokes, seafood, and salads.

🍷 Amontillado: Starts under flor, then evolves to reveal a rich amber color and complex flavor profile with notes of nuts and dried fruits. Ideal with savory dishes and aged cheeses.

🍷 Oloroso: Aged without flor, resulting in a deep, full-bodied character with notes of walnuts and leather. Perfect with hearty stews, game meats, and strong cheeses.

🍷 Palo Cortado: Rare and refined, blending the finesse of Amontillado with the body of Oloroso. Rich and nutty, pairs wonderfully with grilled meats.

🍷 Cream Sherry: Sweetened oloroso-based wine with luscious notes of fig, chocolate, and dried fruits. Ideal for dessert or after a meal.

🍷 Pale Cream Sherry: Lighter option with a rich and indulgent experience, offering a range of flavors.

Areni Noir is a relatively undiscovered ancient grape variety that intricately weaves into the rich tapestry of human history, harkening back to the very origins of winemaking.

Originating from the village of Areni in southwest Armenia, the Areni Noir grape is a relatively undiscovered ancient variety intricately linked to the origins of winemaking. In 2011, archaeologists discovered the world's oldest known winery in the Areni-1 cave complex above the village, dating back at least 6,100 years. This find suggests winemaking in the region likely began even earlier.

✨ But how does it taste? ✨

Areni, a unique grape varietal, boasts remarkable age and natural potential. Resembling Pinot Noir in color, Areni Noir offers a full-bodied structure with vibrant tannins. Its flexibility allows for diverse winemaking approaches, resulting in various styles like sparkling wines, rosés, and robust reds suitable for aging. Aromas of cherry, black pepper, and black tea characterize Areni.

Have you tried one of the most ancient varieties? Did you like it? Book a private tour to Armenia to learn about their winemaking tradition, culture, and heritage while sipping their amazing wines!

Previously known as champán or champaña, Spanish winemakers opted for the name "cava" in the 1970s to sidestep objections from French Champagne producers. Strict appellation rules dictate that for a wine to be labeled Cava, it must originate from the Cava Denominación de Origen (DO) region and undergo a secondary fermentation in the bottle, among other criteria.

What is the difference between wines from Cava and Corpinnat? Well, both are quality Spanish sparkling wines with affordable price ranges! Nevertheless, entry prices for wines for Corpinnat are higher — read on to learn why

Cava can be produced in over eight regions of Spain, whereas Corpinnat comes only from the historical homeland of Penedés. Standards for Corpinnat are higher as they wished to highlight the origin of Spanish sparkling wine.

When produced by the traditional method, Corpinnat has two times longer aging requirements of a minimum of 18 months on its lees. Grapes must be manually harvested to guarantee the highest possible quality of the wines, and the wines must be biodynamic and made with specific practices.

What is natural wine, and is it the same as organic or biodynamic wine?

Certification: natural wines do not require official certification to guarantee the quality of the produced wines, but there are certifications for organic and biodynamic wines.

Sulfites: biodynamic wines may contain up to 100 mg/L of added sulfites, while natural can’t use any added sulfites.

Timing: only biodynamic wines follow a specific astronomic calendar, which includes following practices of when to prune vines, when to harvest, etc.

Natural wines (aka low-intervention wines) are made with minimal contact and chemicals, fermented spontaneously with native yeast, and contain only trace amounts of added sulfites.

They are rarely filtered or fined, so small dissolved solids floating around make the color of the wine cloudy in your glass ☁️

Natural wines have less shelf life potential and less potential for further bottle aging. So when you buy a bottle, it's better to consume sooner! 😉

Have you heard of natural wines? Why are they popular, and what does "natural" mean in the context of viticulture? First off: all wines are made naturally. 😉 Nevertheless, the popular term "natural wines" refers to the following:

🍷 Minimal Intervention — Natural winemakers aim to let the grapes and the natural fermentation process express themselves without excessive intervention. This can result in wines with a unique and sometimes unpredictable character.

🍷 Low to No Sulfur dioxide (SO2), No Additives or Chemicals — Natural wines are made without artificial chemicals, additives, or preservatives, which includes avoiding the use of commercial yeast and instead relying on the natural yeast present on grape skins for fermentation.

🍷 Unfiltered and Unfined — natural wines are often unfiltered and unfined, meaning that they may appear cloudy or have sediment.

It's important to note that there is no official definition or certification for natural wine, and interpretations of what constitutes "natural" can vary among producers! As a result, the term is often used to convey a general approach to winemaking that emphasizes sustainability, minimal intervention, and a connection to the land.

Sherry's roots in Andalusia's sun-soaked vineyards trace back over 3,000 years to the ancient Phoenicians. Initially known as 'sherish' in England, Sherry gained popularity when Henry I proposed a bartering agreement: English wool in exchange for sherry wine.

The unique climate and chalky soil of Jerez de la Frontera shape its unparalleled flavor. The meticulous 18th-century "Soleraje" blending system ensures consistency and complexity; today, Sherry stands as a symbol of Spanish viticulture, prized for its versatility and ability to enhance diverse culinary experiences.

Georgia – the oldest known winemaking country, the land of ancient traditions, and the most unique cuisine in the world.

Georgians produce wine in "kvevri" (or "qvevri") which are clay pots buried into the ground. Archaeologists found the oldest one with grape seeds dating back to the 6th millennium B.C. In 2013, UNESCO added the traditional Georgian method of kvevri winemaking wine to its list of the world's intangible cultural heritages.

, Spain's beloved sparkling wine, holds a prestigious status among the country's most renowned offerings. Derived from the Spanish word for "cave," cava denotes the cellars where these wines gracefully mature. 🥂

The heart of Cava production is in Sant Sadurní d’Anoia, where José Raventós crafted the first Cava in 1872, inspired by his travels to France. Introducing Champagne-style winemaking to Spain, Raventós founded Codorníu. Today, alongside Freixenet and Juvé & Camps, these pioneering wineries dominate the world of Cava production. 🍾🇪🇸

A must-visit in Spain is the winemaking region, with a history dating back to 1153 when Bertrand de Castellet, a knight of Christian Count Ramon Berenguer IV, secured victory over the Moors at Siurana.

In 1194, during Alfonso I el Casto's reign, Carthusian monks arrived, founding the Scala Dei charterhouse and bringing winemaking knowledge from Provence.

The Priorat wine zone aligns with the Carthusian land, and the region received its name from the Catalan term for the monks' priory, where they lived and worked. 🍇🇪🇸

is a sparkling wine made by traditional methods, not unlike !

The vast majority of Cava comes from the Penedès wine region in Catalonia, in northeast Spain near Barcelona. The Cava DO is not contiguous — while 95% of Cava comes from Penedès, there are also areas in Aragón, Euskadi, Extremadura, La Rioja, Navarra, and València authorized to make Cava wine.

Spain's wine culture, a deeply rooted and ancient history, distinguishes itself by treating wine more as a culinary companion than a standalone beverage. It's a surprise to many that Spaniards rarely enjoy a glass of wine without pairing it with a hearty ration of food.

Additionally, traditional winemaking in Spain involves picking fully ripened grapes in balance with flavor, acidity, and sugar ripeness. The fermentation process, conducted without additives (due to limited technology), adds authenticity to the rich heritage of Spanish wines. 🍷🍇🇪🇸
