Wands Up! ⚡️

In the Harry Potter books' wizarding world, Butterbeer is a popular beverage among wizards and witches, particularly enjoyed by students of Hogwarts School of Witchcraft and Wizardry. It is described as a slightly alcoholic, frothy drink that tastes a bit like butterscotch, with a warm and comforting flavor.

The drink is typically served in the Three Broomsticks Inn in the village of Hogsmeade, a location frequently visited by Harry Potter and his friends. Butterbeer is also available in various forms, such as cold, hot, and even as a bottled beverage.

In the Muggle real world, Butterbeer's been brought to life in The Wizarding World of Harry Potter at Universal Studios Hollywood and Universal Orlando. The real-life version is non-alcoholic and is often described as having the flavors of butterscotch and shortbread. Many forms of the drink, except hot, can be served vegan and/or dairy-free.

PRETZEL BREAD PUDDING

Sommerfest – EPCOT
Makes 15-18

VANILLA SAUCE

1 egg
1/4 cup sugar
3/4 cup heavy cream
1 cup milk, divided
2 1/2 teaspoons cornstarch
3/4 teaspoon vanilla extract

PRETZEL BREAD PUDDING

1 pound pretzel bread
1 cup milk
1 2/3 cup heavy cream
1 1/3 cups sugar
4 eggs
1 3/4 teaspoon vanilla paste
1/2 teaspoon baking powder
1/8 teaspoon cinnamon

TOPPING

Caramel sauce

FOR VANILLA SAUCE:

Beat egg and sugar in small bowl. Set aside.
Bring cream and 3/4 cup of milk to a simmer in a small saucepan over medium heat. Slowly add 1/3 of the simmering cream mixture to the eggs, whisking constantly to temper eggs. Carefully pour back into saucepan.
Whisk cornstarch and remaining 1/4 cup of milk together in a small bowl. Add to saucepan. Cook over medium heat, stirring constantly until sauce thickens. Remove from heat and add vanilla extract.
Place a mesh strainer over a bowl. Pour sauce through strainer and cool to room temperature.
Cover and refrigerate up to 7 days.

FOR PRETZEL BREAD PUDDING:

Tear or chop pretzel bread into large pieces. Place in a food processor and pulse until coarse crumbs form.
Whisk milk, heavy cream, sugar, eggs, vanilla paste, baking powder, and cinnamon in a large bowl. Add pretzel bread pieces. Cover and refrigerate 4-12 hours.
Preheat oven to 375°F. Spray 15 1/2 cup ramekins or muffin tins with non-stick cooking spray. Add 1/3 cup pretzel bread pudding mix into each ramekin or muffin tin. Bake for 25-30 minutes, until centers of pretzel bread puddings are firm.
Cool for 5 minutes before removing from molds.

TO SERVE:

Remove vanilla sauce from refrigerator. Heat in small saucepan over medium-low heat until warm. Place warm pretzel bread puddings on small plates. Top each with 2-3 tablespoons vanilla sauce. Drizzle caramel on top.

MICKEY MOUSE PEANUT BUTTER COOKIE MADE WITH M&M’S MINIS PEANUT BUTTER CHOCOLATE CANDIES

- Makes 12 Cookies -

PEANUT BUTTER COOKIES
* 1 1/2 cups all-purpose flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 1/2 cups light brown sugar
* 2 tablespoons honey
* 1 cup creamy peanut butter
* 2 eggs
* 1/4 cup unsalted butter, melted
* 1 teaspoon vanilla extract

PEANUT BUTTER FROSTING
* 1/2 cup unsalted butter, softened
* 1/2 cup creamy peanut butter
* 1 cup powdered sugar, sifted
* 1 1/2 tablespoons heavy cream
* 1/2 teaspoon vanilla extract

TOPPING
* 3/4 cup M&M’S Minis Peanut Butter Chocolate Candies

FOR PEANUT BUTTER COOKIES:
🥣 Combine flour, baking powder, baking soda, and salt in a medium bowl; set aside.
🥣 Beat light brown sugar, honey, peanut butter, eggs, butter, and vanilla extract in the bowl of an electric mixer fitted with a paddle attachment on medium speed until creamy.
🥣 Add flour mixture and beat on low speed until fully incorporated. Refrigerate for 30 minutes.
🥣 Preheat oven to 350°F. Line 2 baking sheets with parchment paper or silicone baking mats.
🥣 Place 1/4 cup chilled peanut butter cookie dough in 3 1/2 inch Mickey Mouse-shaped cookie cutter on prepared baking sheet and press dough to fill cutter. Carefully pick up cookie cutter and repeat with remaining dough, placing 6 cookies on each baking sheet.
🥣 Bake 10-12 minutes, until edges begin to brown. Cool for 10 minutes on pans, then move to wire racks.
🥣 Cool completely before frosting.

FOR PEANUT BUTTER FROSTING:
🥣 Beat butter and peanut butter in the bowl of an electric mixer fitted with a paddle attachment on medium speed until fully combined.
🥣 Add sifted powdered sugar and mix on medium speed until fully combined.
🥣 Reduce heat to low and add heavy cream and vanilla extract until incorporated.
🥣 Refrigerate, covered, until ready to use.

TO SERVE:
Spread peanut butter frosting on each cookie. Sprinkle tops with M&M’S Minis Peanut Butter Chocolate Candies.

Cheesy Enchilada Soup from Fiddler, Fifer & Practical Cafe at Disney California Adventure Park

Serves 6 to 8

INGREDIENTS

⭐️ 5 yellow corn tortillas, cut into thin strips
⭐️ 1/4 cup vegetable oil, plus 2 tablespoons, divided
⭐️ 1 yellow onion, chopped
⭐️ 1 tablespoon finely chopped garlic
⭐️ 1 red bell pepper, chopped
⭐️ 1/2 cup corn
⭐️ 5 cups chicken stock
⭐️ 15-ounce can tomato puree
⭐️ 1/2 teaspoon coarse salt
⭐️ 1 1/4 teaspoons chili powder
⭐️ 1/4 teaspoon freshly ground black pepper
⭐️ 1 1/4 teaspoons sugar
⭐️ 3/4 teaspoon hot sauce
⭐️ 1 teaspoon Worcestershire sauce
⭐️ 4 teaspoons flour
⭐️ 1/2 cup water
⭐️ 2 1/2 cups shredded cooked chicken
⭐️ 1/2 cup heavy cream
⭐️ 1/4 cup sour cream
⭐️ 1 cup shredded mild cheddar cheese
⭐️ 1/2 cup black beans, drained and rinsed
⭐️ 1/4 cup chopped fresh cilantro

DIRECTIONS:

🥄 With caution, heat 1/4 cup vegetable oil in a 10-inch skillet. When oil is hot, carefully add tortilla strips and stir until golden and crisp, 2 to 3 minutes. Drain on paper towels and set aside.
🥄 Cook onion in remaining 2 tablespoons oil in a medium saucepan over medium heat until translucent. Add garlic, bell pepper and corn; cook for about 2 minutes.
🥄 Stir in chicken stock, tomato puree, salt, chili powder, pepper, sugar, hot sauce, and Worcestershire sauce; bring to a boil. Lower heat and simmer for 15 minutes.
🥄 Whisk flour and water in a small bowl and stir into soup. Bring to a boil, then simmer 4 minutes.
🥄 Add chicken and bring back to a simmer. Stir in cream, sour cream, shredded cheese, and black beans.

🥣 To serve, garnish with reserved fried tortilla strips and cilantro.

✨Walt Disney World recently broke some news regarding the Genie+ system and Individual Lighting Lane, and there are some big changes coming July 24!✨

On July 24th, Disney is replacing Genie+ with Lighting Lane Multi Pass. Here is how this will work:

🌟Now, instead of waiting until the day of to purchase Genie+ 🧞‍♂️, you can purchase the Multi Pass for one theme park per day and pre-schedule 📅 up to 3 experiences (and times) in advance of your visit!

Don't worry if you are wanting to park hop, you still can. Once you have used one of the selections at the park that you originally purchased the Multi Pass for, you are able to go to another park and make selections through your My Disney Experience app! 😁

Also, after using the 1st selection (checking into the ride), you can go ahead and schedule another attraction through the My Disney Experience app. So....while waiting in line, you can make another selection.

🌟To help with the availability of rides, when you are selecting your three attractions, you have to select one from Group 1 and the other 2 from Group 2. Once you have used a selection, you can select from any group.
Individual Lightning Lane currently allows you to purchase specific rides the day of at the 4 Walt Disney World parks. This will now be known as Lightning Lane Single Pass. Here is how it will work:

🌟You can purchase in advance up to 2 selections per day. Some of the rides included are:
* Seven Dwarfs Mine Train 🚂
* TRON Lightcycle/ Run ⭐️
* Guardians of the Galaxy: Comic Rewind 💫
* Avatar: Flight of Passage 🌄
