Green Eggs & Ham Tots from Green Eggs and Ham Cafe

INGREDIENTS

🥚 2 cups worth of tater tots (a bag of frozen ones will do just fine)
🥚 2 tablespoons worth of diced ham (about 2 slices worth)
🥚 ¼ cup of white cheddar queso (store-bought is great)
🥚 2 Green Eggs (…OH. Do you not have those? OK, OK. Two just regular eggs, scrambled together. And below are the ingredients for the spinach pesto we’ll be whipping up to make ‘em green…)
🥚 2 cups of spinach
🥚 ¼ cup of chopped italian parsley
🥚 5 basil leaves
🥚 2 tablespoons of grated parmesan
🥚 ¾ cup of olive oil

DIRECTIONS

🌎 Preheat oven to 375℉.
🌎 We need to prepare the spinach pesto first, so combine the spinach, parsley, basil leaves, parmesan, and olive oil all into a blender and pulse until the ingredients are mixed together.
🌎 In a bowl, mix together one tablespoon of the spinach pesto with ½ cup of scrambled egg. Place egg mixture into a small baking dish into the preheated oven for six minutes. Once finished, remove eggs, fluff, and set aside.
🌎 Prepare your tater tots according to package directions then set aside on a paper-towel-lined plate to remove any excess grease.
🌎 Place queso into a microwave-safe bowl and cook on high for 20 seconds.
🌎 Place tater tots into a tin or a small oven-safe baking dish. Cover them with the warm green eggs and about ½ of the ham, place into oven (still at 375℉) for about 3 minutes.
🌎 Pull tots out of the oven and pour queso over the entire plate, ensuring proper coverage. Garnish with remaining ham.

First stop: Hogwarts! Seeing it in person feels like a dream, especially walking through the castle halls and hearing the whispers of magic in the air. 🏰✨

Then, the *Escape from Gringott's* ride is an absolute thrill—so much action, you have to remind yourself to breathe! But the real show-stopper? Watching the dragon on top of Gringott's Bank ROAR and breathe FIRE. 🔥 It’s honestly like being in the middle of the battle between good and evil, but with way more fire-breathing drama. 😂

Here are the key details about this popular offering:

🍽 Designed for children aged 3-10 who are enrolled in The Oceaneer Club/Lab
🍽 Available exclusively during the second dinner seating
🍽 Staff will inquire with diners about participation in Dine and Play
🍽 Parents are required to es**rt their children to the dining room entrance for a check-in with the Youth Activities team between 9:00 p.m. and 9:15 p.m. Youth Activities Counselors will then accompany the kids to Disney’s Oceaneer Club/Lab.

BEEF AND SHRIMP from Cinderella’s Royal Table: Serves 4⁠
⁠
SMASHED FINGERLING POTATOES⁠
1 1/2 pounds fingerling potatoes⁠
1 clove garlic⁠
1/4 cup olive oil⁠
⁠
BABY CARROTS⁠
1/4 cup olive oil⁠
3 cloves garlic, minced⁠
2 cups baby carrots⁠
⁠
BEEF⁠
4 (5-ounce) beef tenderloin filets⁠
⁠
SHRIMP⁠
2 tablespoons olive oil⁠
1/2 pound medium shrimp, peeled and deveined⁠
3 cloves garlic, minced⁠
1 cup white wine⁠
1/4 cup lemon juice⁠
1 stick unsalted butter⁠
2 tablespoons chopped fresh chives⁠
5 piquanté peppers, stems and seeds removed⁠
⁠
DEMI-GLACE⁠
1/2 cup beef demi-glace⁠
2 tablespoons blood orange juice⁠
⁠
FOR SMASHED FINGERLING POTATOES:⁠
Preheat oven to 300°F. Combine potatoes, garlic, and oil in a large roasting pan. Bake for 40 minutes until potatoes are tender.⁠
Place potatoes and garlic in a bowl and smash with a potato masher or fork. Add salt and pepper to taste. Keep warm until ready to serve.⁠
⁠
FOR BABY CARROTS:⁠
Heat oil in a large sauté pan over medium heat until hot. Add garlic and cook for one minute, until fragrant. Add carrots and reduce heat to medium-low.⁠
Cook carrots, stirring occasionally for 10 minutes or until tender.⁠
⁠
FOR BEEF:⁠
Heat a grill pan or heavy nonstick skillet over medium-high heat about 5 minutes, until very hot. Season beef generously with salt and pepper.⁠
Sear filets for about 4 minutes on each side, turning once, which will cook the filet to medium rare. If meat browns too quickly before interior is done, reduce heat to medium-low. ⁠
Let beef rest 5-10 minutes before serving.⁠
⁠
FOR SHRIMP:⁠
Heat olive oil in a medium sauté pan over medium heat until hot. Add shrimp and garlic and cook for 2 minutes.⁠
Remove shrimp from pan. Add wine and lemon juice and cook, stirring occasionally for 10 minutes, until liquid is reduced by half.⁠
Reduce heat to low and stir in butter. Add shrimp back to pan, stirring to heat through.⁠
Remove from heat and add chives, piquanté peppers and salt and pepper, to taste. ⁠

FOR DEMI-GLACE:⁠
Heat demi-glace in a small saucepan over medium heat until warm. Stir in blood orange juice.⁠
