Made a yummy vegan cauliflower pesto the other night! Placed in a food processor:

1 head cauliflower
2/3 cup olive oil
1.5 tsp ground Himalayan salt
1 TBS of Italian seasoning
1/4 C fresh parsley
4-5 cloves garlic
1/4 Cup fresh walnuts
Fresh ground black pepper to taste

My Italian seasoning is equal parts Basil, oregano, Marjoram, thyme and a pinch of rosemary

Blended it until it was evenly fine and then cooked on medium heat stirring often until the cauliflower was soft (10-15 minutes).

We get a garbanzo bean pasta that is a tasty gluten free option that it was good on top of.

Don't be afraid to be generous with the pesto on the pasta. The more the merrier!

I keep forgetting to take pictures of our food. Since the last post we've had stir fry, chilli, spaghetti squash and salmon melts. Here is last nights, day 11 of no sugar September; chicken tacos. One of the easiest and favorites in our family.

Ok, in support of my sister we've decided to participate in a 30 day no sugar challenge. Organic raw unfiltered honey as well as powdered stevia leaf is ok as a sweetener on occasion. To one up it, Chloe is going dairy free, gluten free as well. Each day I will post our family dinner to show it is possible to still eat good food without sugar, gluten or dairy.
