Hot nights mean easy dinners. Caponata, a Sicilian dish, is perfect. Roasting the eggplant was effortless and cut back tremendously on oil as eggplant is like a sponge. It made the dish lighter and it allowed to drizzle EVOO on top.

In the crazy and hectic lives we have had these past two weeks it was hard to eek out time to honor this beautiful woman. I don’t know what she would think of this next venture. When in Rome or Gloucester…….. the freshest tuna evah (I have my Bawstin accent back). Thank you for filling our need to eat amazing seafood. I chopped the tuna wicked small and tossed with sesame oil and a little rice wine vinegar. Layed it on a bed of avocado 🥑 on Himalayan salt tablets. Oh, the things you find cleaning out your house!!!! (kinda)

The term means green grocer and it has been my mantra this week with both a soup and a frittata. The combo of late winter/spring vegetables is amazing. ……. This potato, thyme crusted frittata is filled with all the fresh (hand shucked) goodness of . Vignarola is an ancient and tasty peasant recipe, based on the simplicity of its preparation and its ingredients. The bonus…. It’s vegan and it’s on my menu thanks for all you shucking did 💚💚💚
