Here's a quick & easy recipe to have in your pocket all summer. Coctel de Camarones, Mexican-Style Shrimp Cocktail. Cool, refreshing, and packed with flavor. it's the perfect hot weather dish. Recipe below...

Coctel de Camarones

1lb Lobster Gram Jumbo or Colossal Shrimp, thawed
⅓ cup chopped yellow onion
¼ cup freshly squeezed lime juice
2 plum tomatoes, seeded and chopped
1 English cucumber, finely chopped
1 stalk celery, finely chopped
1 jalapeno pepper, seeded and finely chopped
2 tsps each salt and pepper
1½ cups Clamato
1 cup ketchup
1 bunch fresh cilantro, finely chopped
2 Tbsps hot sauce, we used Valentina
2 avocados - peeled, pitted, and chopped

Mix onion with lime juice in a small bowl and allow to stand for 10 minutes.

Meanwhile, toss shrimp, roma tomatoes, cucumber, celery, jalapeno, salt, and black pepper in a medium bowl until thoroughly combined.

Whisk tomato and clam juice cocktail, ketchup, cilantro, and hot pepper sauce in a separate bowl; stir dressing into shrimp mixture.

Gently fold in avocados. Stir in onion mixture. Cover and chill thoroughly, at least 1 hour. Serve with saltine crackers or tortilla chips.
