Texas Tw***ie French Toast anyone?!? What is a Texas Tw***ie you ask? A Texas Tw***ie is a brisket & cream cheese stuffed jalapeño popper wrapped in bacon and smoked. We took inspiration from that and stuffed our thick sliced brioche French toast with our BBQ beef burnt ends, cheddar cheese, & jalapeño lime cream cheese. We top that with a thick slab of our billion dollar bacon, house bourbon bbq glaze & crispy frizzled onions. This one hits all the notes; sweet, salty, spicy, crunchy, gooey goodness! Available starting tomorrow morning!

It's that time again! Winter is upon us so here comes our winter menu! Full of fun holiday flair, this one is sure to satisfy those warm & comforting winter cravings! Our Jersey Winter Rigatoni features big chunks of Nueske's bacon, mushrooms grown locally by our friends at RV High School, roasted peppers, Brussels sprouts and fresh sage in our classic vodka sauce. Our South Pole Salmon is coated in Cajun spice and broiled then topped with house pico de Gallo, guacamole, & citrus salsa verde over yellow rice. Delicious! The Grinch Oniom Pork chops are smothered in Gruyere cheese and a French onion reduction over our mashed potatoes. Our not so classic Shepherds Pie has all the familiar flavors but we stepped it up by replacing the ground beef with our 24 hour braised chuck and adding some of our 3 cheese blend to the top. Decadent! My favorite of the bunch is Santa's Ribeye. Coated in our Black Magic spice rub (not spicy) topped with our country peppercorn gravy and some crispy battered onion rings. The one in this picture was supposed to be for the staff to share but it didn't make it to their table for some reason...I think maybe it was an elf. We will be sharing some photos of our new seasonal breakfast menu real soon so check those notifications!! Hope you all love these dishes and we see you here this weekend!

Tired of cooking on Christmas Morning? We are open here 8-3pm serving up the classics and this year we are also offering our take home heat & eat Breakfast Bakes! It’s like a breakfast lasagna and is sure to be a crowd pleaser. Layers of crispy hash browns, scrambled eggs, and assorted cheeses & toppings. Choose Egg & Cheese, Bacon & Sausage, Southwest with chorizo, or our RV High mushroom version with truffle Parm hash browns, spinach, mushrooms, onions & gruyere. He’s coming back!!! missed me so much he’s decided to come back this week! We were a little short on time during his last visit so we didn’t get to finish filming our Kelly Drives segment. Bob will be here Thursday, December 12th from about 10:30-12 to try some of our diner classics and a couple new dishes from our upcoming seasonal menu. Thanks so much to VacaJay and his wonderful father VacaJay-D for this awesome testimonial!! These two are just the nicest guys you can ever meet. It’s always a little nerve wracking when someone wants to come film something and post it for the world to see so I’m super excited that they had such nice things to say about the restaurant. What are you brunching on this weekend?!? Come in and grab any of our amazing homemade breakfast staples or brunch out on some of our current specials! Coconut shrimp & waffles with a mountain of crispy shrimp, sweet chili glaze, toasted coconut and chopped scallions, our Birria Benedict on a smashed croissant bun, Cheezy Bacon Cheddar Chicken & waffles with buttermilk ranch and cheddar powder, or the incredible Dubai Chocolate Bar French Toast topped with pistachio cream cheese frosting, butter toasted phyllo, crushed pistachios, peanut butter powdered sugar and big chunks of dark chocolate. Dubai Chocolate Bar French Toast anyone?!? Loving this one! We made a cream cheese frosting with some homemade pistachio butter and put a big scoop on top of our brioche French toast along with some dark chocolate chunks, crushed pistachios, butter toasted phyllo dough crisp, chocolate drizzle & peanut butter powdered sugar. This one is the perfect blend of sweet and salty flavors & hits all those Dubai bar flavors. Hope you love it!

This one is for you Michael Bosner! Back at it again with the From Scratch posts!!! Today we’ve got our Corned Beef Hash. So what is corned beef hash? It’s chopped up corned beef with potatoes and sometimes onions, bell peppers or both. Some places use diced corned beef, some use shredded, but unfortunately most places just pop open a can and scoop it onto the griddle. Not my style, too easy. We start with really nice raw, brined brisket points from Sheinman Provisions right across the bridge in Philly. We roast about 100lbs of them at a time in a super hot oven to get some color. Then we wrap those pans up tight and cook the briskets overnight in our hold oven. The next day we have incredible soft jiggly corned beef. Like meat jello! We remove just the right amount of fat and chop those briskets. We add in some diced local potatoes, some fried onions and the perfect amount of the pan drippings. The ratio is important here. Not enough and the hash crumbles, too much and it’s too soft to slice. We pack our mixture into molds and let them cool overnight. Then we slice thick slabs and sear them to order. Enjoy some of this hand crafted goodness with some eggs or try our Breakfast Reuben with corned beef hash, sauerkraut, Swiss, a sunny side up egg and Russian dressing on an onion poppy bun. Instant hangover cure! Really proud of how this hash comes out and we hope you love eating it as much as we love making it.

The next installment of our From Scratch series: Chicken Shawarma! If you aren’t familiar with shawarma, it’s a middle eastern spiced dish originally from Turkey that’s traditionally made by stacking meat (in this case chicken) on a big spit and roasting on a rotisserie. The crispy charred edges of the giant meat stack are carved off and seared again on a flat top griddle. We don’t have one of those rotisseries and we also don’t sell enough shawarma to warrant cooking a giant trompo of chicken every day. So how do we do it? First we start with boneless skinless chicken thighs. Thighs are undoubtedly the best part of a chicken. We make a wet marinade with some secret ingredients, vinegar and fresh citrus juices. The thighs get coated and relax overnight. Then we make our dry rub. At last count our shawarma spice blend has 13 ingredients. Whenever possible we use whole spices that we toast and then grind ourselves. Flavor is just so much better. Marinated chicken gets a generous coating of spices and then we sear it on our griddle until we get some really nice color. This mimics the results you get from the rotisserie. After grilling the chicken goes in the oven for a bit to finish cooking. Then it’s cooled, hand chopped, portioned and when you order we give it a nice sear again and use it in a few different dishes like our Shawarma Pita, Shawarma Salad, or our super popular Butter Chicken dish. The Butter Chicken if you have never had it is our shawarma chicken sautéed with seasonal vegetables in a decadent sauce made with some harissa chili paste and heavy cream. It’s served over some saffron rice (we make that too and use real saffron) with a grilled garlic pita. It’s in my personal top 5 dishes currently.
