Châteaubriand

FRANCE

Contrary to popular belief, the word Châteaubriand does not refer only to a cut of beef, but to a method used to grill or roast a thick cut of beef tenderloin. The steak was originally prepared by a chef named Montmireil in 1822 for a French author, diplomat, and statesman Francois René Vicomte de Chateaubriand.

When served in France, Châteaubriand will always be accompanied by a sauce – most often either a traditional red wine sauce or Béarnaise sauce. The steak is usually served with a side of roasted new potatoes or tiny chateau potatoes.

Pempek

PALEMBANG, INDONESIA

Pempek is a traditional Indonesian fish cake made with ground fish meat and tapioca. The actual origin of this dish is the city of Palembang, situated in the South Sumatra province. The origin story of pempek says that an old Palembang citizen was tired of the traditional fried or grilled fish, so he thought of an innovative way to ground the meat, mix it with tapioca flour, and deep-fry it to get a crunchy and delicious snack.

He then used to cycle through the city and sell the fish cakes to Palembang citizens. Over time, pempek was recognized as a praise-worthy snack, and today it is considered to be a traditional Indonesian delicacy. These round or rectangular cakes are usually steamed, and right before serving they are fried in vegetable oil and cut into bite-sized pieces.

Pizza Napoletana

Provoleta

In Argentina, provoleta or grilled provoleta cheese is typically enjoyed before a meal as an appetizer. It's one of the staples of the Argentine bbq asado. The semi-hard provolone is the perfect cheese for the grill, because it's compact and firm.

For asado, it is sliced about an inch thick, seasoned with a generous amount of oregano, maybe a light sprinkling of dried red chili flakes, and grilled until it just starts to melt in the center.
