O.K. Just put 100 lbs of golden plums into TikTok (my fermenter) SpG is 1.05 (7% potential abv). Added pectic enzyme and tomorrow will add 5 lbs of blackberry blossom honey. I am going to inoculate this with Saflager W-34/70 Fermentis lager yeast and do a cold ferment. Goal is a low alcohol (7% abv) sweet sparkling plum mead. Something New !!!
