BÁNH XÈO, or Vietnamese pancakes, are loved all across Vietnam, but each region brings its own delicious twist!

🇻🇳 Southern Bánh Xèo: In the south, bánh xèo is large and crispy with a beautiful golden color from turmeric. The filling is loaded with shrimp, pork, mung beans, and bean sprouts, and it’s enjoyed with a mix of fresh herbs like lettuce and perilla, all dipped in a tangy, sweet fish sauce.
🇻🇳 Central Bánh Xèo: In Central Vietnam, especially Hue, bánh xèo is smaller and a bit thicker but still crispy. Filled with shrimp, pork, and sometimes egg, it’s served with a special dipping sauce, often a tasty fermented fish sauce (mắm nêm) or a unique soy-based sauce.
