I have this amazingly easy recipe for a delicious Filipino version of Chinese cha siu bao.
I call it "Siopao Asado" or in English "steamed bun"
It takes about 10 minutes to prepare, an hour for the dough to rise, and 20 minutes cooking time. Its simple but delicious, really filling and great for kids or for making a small business as a street vendor.
Watch my video and see how easy it is
Recipe is in 2 parts : dough and filling
Dough:
2 1/2 cup all purpose flour
3 tbsp sugar
1tsp baking powder
1/4 tsp salt
2 TEASPOONS of instant dry yeast(the video says tablespoons but it is wrong)
3/4 cup of warm water
2 tbsp vegetable oil
Mix all the ingredients in one bowl. Mix them well until you have a dough then place on a flat surface dusted with flour. Knead the dough for 10 minutes and rest for one hour in a bowl in a warm place covered with a damp cloth. After one hour the dough should have risen to at least 2 or 3 times its size.
Whilst the dough is rising make the filling
Asado:chicken/pork filling
1tbsp vegetable oil
4gloves garlic
400g pork or chicken
1tsp magic sarap
2 tbsp soy sauce
2 tbsp oyster sauce
1 cup water
2 tbsp brown or white sugar
2 tbsp cornstarch, dissolved in 1/3 cup
Salt&pepper
Cook the garlic and chicken or pork in a frying pan with the oil and mix all the ingredients and stir until well cooked and you have a thick sauce. Set aside to cool
Take the risen dough and divide into 8 to 10 small balls and roll each one into a thin flat round shape. Place a little of the cooled filling in the middle of each disc and then fold up the edges to meet in the Centre at the top. Try to pinch the edges together till they seal.
Steam
Boil 1 litre of water ,and put the buns in a steamer above the water on the medium fire, cover with a lid but wrap the lid in a cloth so the condensation does not drip down onto your buns whilst cooking. steam for 20 minutes .
They should be big and white and have fluffy texture . They will be very hot inside so be car
