Perched on the cliffs of Skye, overlooking the stark sea, the ruins of Caisteal Chamuis cut a striking figure with the sweeping mountain range visible across the bay.

When restoring the 19th century farmstead into our distillery we knew we wanted to keep things traditional with gleaming copper stills and traditional wooden washbacks.

In order to do this we’ve built a removable roof, so that when the time comes we can replace our stills without disturbing the old building.

Allowing us to produce whisky here for the next two hundred years.

Iona distilled her Journeyman’s Dram in 2019.

When the opportunity came around to create her own whisky, she instantly knew she would be including chocolate malt.

Looking more like Guinness after fermentation than wash she was pleasantly surprised with her spirit result, instantly smelling and tasting the chocolate malt.
