Before the arrival of the Spaniards, the ancient Mayans were masters of agriculture, cultivating a wide variety of products in the fertile lands of the Yucatán Peninsula. Their diet was based on foods such as corn, beans, squash, chili peppers, tomatoes, cocoa, bee honey, fish, and poultry.

These basic ingredients were combined with aromatic herbs and local spices to create dishes full of flavor and cultural significance.

With the arrival of the Spanish in the 16th century, Yucatán experienced a gastronomic transformation with the introduction of new ingredients and culinary techniques. Products such as wheat flour, lentils, sugar cane, pork, chicken, oranges, lemons, onions, and garlic were incorporated into the local diet, enriching the diversity of flavors and textures.

𝗖𝘂𝗹𝗶𝗻𝗮𝗿𝘆 𝗦𝘆𝗻𝗰𝗿𝗲𝘁𝗶𝘀𝗺: 𝗔 𝗠𝗲𝗲𝘁𝗶𝗻𝗴 𝗼𝗳 𝗧𝘄𝗼 𝗪𝗼𝗿𝗹𝗱𝘀

The culinary mestizaje between Mayan and Spanish cuisine resulted in a unique fusion of flavors and techniques, known as Yucatecan cuisine.

Examples of this syncretism are emblematic dishes like cochinita pibil, poc chuc, and panuchos, which combine native ingredients with European influences in their preparation.

𝗧𝗵𝗲 𝗗𝗶𝘃𝗲𝗿𝘀𝗶𝘁𝘆 𝗼𝗳 𝗬𝘂𝗰𝗮𝘁𝗲𝗰𝗮𝗻 𝗙𝗹𝗮𝘃𝗼𝗿𝘀

Each of the 106 Yucatecan towns or municipalities brings its own culinary identity to the table, highlighting unique products and dishes that reflect its history and traditions. For instance, Valladolid is known for its longaniza, Motul for its huevos motuleños, Maní for its poc chuc, and Progreso for its fried fish.

Yucatán, a land steeped in Mayan history and natural wonders, boasts an enchanting feature that draws travelers from around the globe - its mesmerizing cenotes. Derived from the Mayan word "dzonot," meaning sacred well, the cenotes are natural sinkholes formed by the collapse of limestone bedrock, revealing the groundwater beneath. Over time, these geological marvels have evolved into stunning freshwater pools, some of which are open-air, while others are hidden within cave systems.

✨𝗙𝗼𝗿𝗺𝗮𝘁𝗶𝗼𝗻 𝗮𝗻𝗱 𝗧𝘆𝗽𝗲𝘀 ✨

Millions of years ago, the Yucatán Peninsula was submerged under a shallow sea. As water levels receded, rainwater seeped through cracks in the limestone, gradually eroding the rock and forming underground rivers and caverns. Eventually, the ceilings of these caverns collapsed, creating the cenotes we see today.

There are three main types of cenotes: open-air, semi-open, and cave cenotes. Open-air cenotes, also known as "cenotes abierto," are exposed to the sky and often surrounded by lush vegetation, providing a picturesque setting for swimming and snorkeling. Semi-open cenotes have partially collapsed ceilings, allowing some sunlight to filter through, while cave cenotes are entirely underground, accessible only by descending through narrow passageways.

The unearthing of the Pib (El desentierro del Pib) explained at the Museum of Yucatecan Gastronomy.

The Pib is the mayan oven. It consists of a hole dug into the ground; its base is filled with embers, usually from catzin or chukum trees, common in the Yucatán Peninsula. Stone slabs are placed over the embers, retaining heat once the wood has burned. On top of the stones, what is to be cooked is placed, wrapped in banana leaves, and finally, the oven is sealed with clay leaves. Everything cooked in it is referred to as "pibil" by extension.

Why do Yucatecans continue to prefer cooking in this ancestral way?

Gabriel Vázquez Dzul, a Bachelor of Social Anthropology, describes this cultural element as a current symbolic link to our roots, as an ethnic mirror in his own words. He explains: "In pre-hispanic mayan cosmogony, the existence of an underground level of the life cycle is proposed. This level, formally known as the underworld, also reveals the idea of a maternal womb. Although the image of cosmogonic levels is not exclusively mayan, it is related to a place where one goes, especially where one returns, understanding that one has been in that place before; again, the maternal aspect appears. However, this world beneath the earth is a place from which one returns, from which one emerges, a place where life arises, etc. Among current peninsular mayans there are tales and fables explaining the existence of a place where life, that is, maize, was given to men."

El Pib es el horno maya. Se trata de un hoyo que se cava en la tierra; su base se llena de brasas, generalmente de los árboles catzin o chukum, comunes en la Península de Yucatán. Sobre las brasas se ponen planchas de piedra, que guardan el calor una vez que la madera se ha quemado. Encima de las piedras se coloca lo que se va a cocer, envuelto en hojas de plátano, y finalmente el horno se sella con hojas de barro. A todo lo que se cuece en él, por extensión se le denomina "pibil"

¿Porqué los yucatecos seguimos prefiriendo cocinar de esta forma ancestral?

Gabriel Vázquez Dzul, Licenciado en antropología social describe este elemento cultural como un nexo simbólico actual con nuestras raíces, como un espejo étnico en sus propias palabras.

Él mismo, explica: "En la cosmogonía maya prehispánica se propone la existencia de un nivel subterráneo del ciclo de vida. Este nivel, conocido formalmente como inframundo, revela a la vez la idea de un útero materno. Si bien la imagen de los niveles cosmogónicos no es exclusivamente maya, ésta se relaciona con un sitio al que se va, sobre todo al que se regresa, en el entendido de que se ha estado alguna vez en ese sitio; de nuevo, lo materno aparece. Sin embargo, este mundo debajo de la tierra es un sitio del que se retorna, del cual se emerge, lugar en donde surge la vida, etcétera. Entre los mayas peninsulares actuales existen cuentos y fábulas que explican la existencia de un lugar en donde la vida, es decir el maíz, fue dada a los hombres"

Discover with us the origins of true Yucatecan cuisine!! Today we stopped for breakfast and a quick tour in the municipality of Hunucmá, in the state of Yucatán.
They told us that the name of this town means "Swamp Water"
I think It would be more accurated to call It "The place where habanero pepper is hot as hell" 😅🫑.
