During our May trip to New Orleans, we'll be visiting Restaurant Domenica. Here's everything you need to know about this rustic Italian classic:

The name means "Sunday" in Italian, and partners John Besh and Alon Shaya have created a restaurant in the renovated historic Roosevelt Hotel that is as warm and inviting as a traditional Sunday supper in a rural Italian village, where each bountiful dish is lovingly prepared with the purest ingredients according to ages-old technique. Domenica's warm and welcoming dining room is anchored by a number of refectory tables for just such lively meals, and none of the restaurant's handsome wooden tables is covered with a formal cloth: instead, in keeping with the homey tone, each place is marked with a paper placemat printed with the menu. Custom-brewed beers and an Italian-focused wine list perfectly complement the rustic country fare.
Chef John Besh
John Besh is a chef and a native son dedicated to the culinary riches of southern Louisiana. In his restaurants, entrepreneurial pursuits, and public activities, he preserves and promotes ingredients, techniques, and heritage one mouth-watering dish at a time.
Besh’s talent and drive have earned him kudos throughout his career: Food & Wine named him one of the “Top 10 Best New Chefs in America.” He won the coveted James Beard Foundation Award for Best Chef - Southeast in 2006 and he will be inducted into the Foundation’s “Who’s Who” in 2014. His nine acclaimed restaurants (August, Besh Steak, Lüke, Lüke San Antonio, La Provence, Domenica, PIZZA Domenica, Borgne and Johnny Sánchez Baltimore) each celebrate the bounty and traditions of the region. His flagship restaurant, August, is a Gayot Top 40 Restaurant and a Wine Enthusiast Top 100 Restaurant, in addition to being nominated in 2012 and 2013 for the James Beard "Outstanding Restaurant” award.
Alon Shaya
Alon Shaya is executive chef and partner of Domenica and its more casual sister restaurant, Pizza Domenica.
As a boy in Philadelphia, Alon Shaya spent most of his time in the kitchen with his mother and grandmother, which instilled in him a passion for cooking. After training at the Culinary Institute of America, Alon interned at the Rio Hotel and Casino in Las Vegas - too young to gamble, but ready to take on the casino kitchens. In 2001, Alon met Octavio Mantilla, co-owner of Besh Restaurant Group, who lured him to New Orleans.
As Chef de Cuisine at Besh Steak in Harrah's Casino, New Orleans, Alon worked closely with Chef John Besh. In 2009 Alon and Chef Besh forged a partnership to open Domenica, a family-oriented, authentic Italian restaurant in New Orleans Historic Roosevelt Hotel.
