Easy Garlic Vegan Mashed Cauliflower | Yup, It's Vegan!

I am not Vegan, Paleo, or any other specific "dieter" for that matter; but, I do focus more on quality ingredients that are portion-sized, a little bit of everything, not too much.

So, I got the idea from the recipe below to make my own grain bowls by using Mashed Cauliflower instead of Brown Rice (still very good) or other grain just to mix things up.
Once you've got a really good base, you can add sauteed greens, sauteed mushrooms or bellpeppers or squash...

Once I've steamed and mashed my Cauliflower, I use almond milk, vegetable broth, olive oil instead of butter and season it up with Turmeric & Black Pepper - great combination by the way...(https://www.healthline.com/nutrition/turmeric-and-black-pepper)
and seasoned salt. So delicious, low-calorie and super nutritious....The nice thing is you can make enough of a base ingredient like Cauliflower to last you all week!

With CO-VID still here, so many thoughts and ideas come to mind that lead to finding sanity in an "insane world". So, just ask yourself, “Where do I want to be? What is it that I want out of life? How can I become my best self during such unpredictable times?”

I most certainly don’t have the answers, but I know you do….even though you may not know it. I've felt the need to post this because social support and really being listened to objectively is what we need now more than ever...

Health Coaching done right is not giving you the answers; but, instead supporting and guiding you to find the answers for yourself. After all, who knows you better than you, am I right? I don’t blame you not wanting to divulge personal things that you may not be ready to divulge. How can you disclose private matters to someone you don’t know? I get it.

Again, the value of really good Health Coaching is about building trust and building rapport over time -- even if it’s taking baby steps and starting a conversation. Should you decide on taking a step toward your own self-discovery, I’m with you. Especially during these times of unrest, uncertainty and serious anxiety – support is vital.

So, how can I support you? First off, by making sure you are speaking more than me; making sure you try to find the best answers for yourself; not giving expert advice, but instead asking permission to share ideas if asked and if it can be of benefit. Brainstorm together…maybe two or three different ideas/choices that come from your own intuition/creativity. Then, I’d consider asking thought-provoking questions and reflecting back what was said…simply to confirm thorough understanding. Through all of this your privacy/confidentiality is key and well-respected.

Hello All:

I felt the need to write the article below simply because we are living in such bizarre and uncertain times...We all need a healthy way to express ourselves, am I right? Thank you.

It is time to be brave. It is time to find purpose. It is time to dig deep into who we really are and who we really want to be. Now more than ever – during these tumultuous, uncertain times, we really need to look for the inner strength that we may not know has existed within us all this time. Maybe we’ve never had to “tested” in finding out who we really want to be? How do we set aside our differences and find joy in the everyday and how do we become more grateful...and more resilient? Surely these thoughts have crossed our minds at one time or another, right? We know that gratitude does help people in building trust and rapport with others, helps in dealing with misfortune and setbacks and simply helps people to build greater happiness – so, why is it so difficult to be grateful and resilient?

How are we checking in with ourselves and those that are in our “circle of trust” and how can we become the best version of ourselves if we can’t stop being upset with those that refuse to wear masks, get vaccinations or vote the “right way” or rather vote the way we believe is the right way to vote? How do we not lose respect for someone because of some of the disagreements that have been mentioned? Does history in fact, repeat itself? How can we debate such “tough” issues without losing our own strength and dignity? Could it be that “those who fail to learn from history are condemned to repeat it”…in the words of Winston Churchill.

While we may not agree with our neighbor, our boss or even our own family member, how can we resolve to “rise above it”, remain steadfast to our own beliefs, yet not lose all respect for those we disagree with? These are serious thoughts to ponder and really think about, aren’t they? If we really want to be brave, perhaps we need to think about the consequences of such matters, are you with me? Are we ready to give up on relationships with loved ones that have been in our lives for so long? Is it as easy to simply “unfriend” someone on Facebook? No, really.

I’d like to believe that we have choices and we can make brave choices that can make us better people, even if not everyone agrees. Even braver is remaining steadfast to our beliefs without remaining angry with those that disagree with us; instead, let’s try to see things through “their” lens. That doesn't mean we need to agree. Perhaps we can’t answer why our world is in the state that it is in now, although I’m sure that there is an abundance of opinions and thoughts on this matter, but we can be responsible and proactive and learn from those that have more expertise and knowledge. Who knows, we might actually learn something!

Regardless, if we want to become better at finding inner peace, better at finding the right job, better at disagreements, better at making the most of our current economic status and even better at losing weight how can we really dig deep to find our “WHY” for doing these things? Being brave and grateful is a strong start….

So here is Friday...embarking on another weekend...and with CO-VID -- taming the craziness of overeating or going bonkers over eating too many "naughty foods" can be too much!!

Fortunately, I found this recipe for NO BAKE ENERGY BITES (thx Trader Joe's!) healthy, delicious, filling and they go well with a glass of wine too!

So....1 cup rolled oats; 1/2 cup chocolate chips; 1/2 cup ground flaxseed meal; 1/2 cup crunchy peanut butter; 1/3 cup honey or maple syrup; 1-2 tsp. vanilla extract.
Combine all ingredients together in a bowl; form into 1" balls using hands. Arrange bites on a baking sheet and freeze until set (about 1 hour). Easy, Peasy!!

"Although flaxseed contains all sorts of healthy components, it owes its primary healthy reputation to three of them: Omega-3 essential fatty acids, "good" fats that have been shown to have heart-healthy effects. Each tablespoon of ground flaxseed contains about 1.8 grams of plant omega-3s".

Did you know that “at a cost of $327 billion, diabetes has become the most expensive chronic disease in the U.S., according to the American Diabetes Association's (ADA)” and that “chronic disease accounts for approximately 75 percent of the nation’s aggregate health care spending?” (Per the CDC).

By incorporating the right tools such as motivational interviewing and meeting clients where they are -- self-efficacy increases. This process allows for the client to regain their own grit and moxie to overcoming personal barriers and becoming more self-reliant. Now more than ever, healthcare is in need of a serious makeover, wouldn’t you say? My earliest recollection of how I came to love to learn about the importance of well-being began in childhood. Coming from a large family with an outstanding mom with amazing culinary skills, the seed was planted. The seeds of wholesome and delicious foods -- not too much -- just the right amounts -- to enable proper nutrition. Once one good habit is established, it leads to other good habits.
