The image I've shared is of samosas, which are a popular South Asian snack. They're typically triangular, savory pastries that are deep-fried with a filling of spiced potatoes, onions, peas, lentils, and sometimes ground lamb, beef, or chicken.

Here's a basic recipe for vegetarian samosas:

Ingredients:

For the dough:

2 cups all-purpose flour
1/4 cup vegetable oil or ghee
1/2 tsp salt
Water, as needed to form the dough
For the filling:

2 large potatoes, peeled and diced
1/2 cup green peas
1 medium onion, finely chopped
1 tsp grated ginger
1 tsp cumin seeds
1 tsp garam masala
1/2 tsp turmeric
1/2 tsp red chili powder (adjust to taste)
Salt to taste
Fresh cilantro, chopped
Vegetable oil, for deep frying
Instructions:

To make the dough, mix together the flour, salt, and oil until the mixture resembles coarse breadcrumbs. Gradually add water and knead to form a stiff dough. Cover it with a damp cloth and set aside.

For the filling, boil the potatoes until tender, drain, and set aside. In a pan, heat some oil and add the cumin seeds. Once they start to splutter, add the onions and ginger, and sauté until the onions are golden brown.

Add the spices (garam masala, turmeric, red chili powder, and salt) to the onion mixture and fry for a minute.

Add the boiled potatoes and peas to the pan. Mash the potatoes slightly with the back of a spoon while mixing with the peas and spices. Cook for a few minutes until the mixture is well combined. Add the chopped cilantro and mix well. Let the filling cool down.

Divide the dough into small balls and roll each into a thin oval shape. Cut the oval in half. Take one half and form a cone shape by folding it, sealing the edge with a little water.

Fill the cone with the potato filling, then seal the top by pressing the edges together with a little water. Repeat with the remaining dough and filling.

Heat oil in a deep pan and fry the samosas in batches on medium heat until they are golden brown and crispy.

Drain on paper towels to remove excess oil.

Serve hot with chutney or ketchup, as shown in the image. Enjoy your homemade samosas!
