Is Alaska on your list? I can't recommend the experience from Holland America strongly enough. We flew from Seattle to Anchorage, then took the scenic train to Denali, where we spent two nights. Then we took a coach to Whittier, where we boarded the elegant, but not oversized, Nieuw Amsterdam for 7 nights at sea. Along the way I was able to capture a ton of amazing photos, which I've posted here:

Good morning from Queen Mary 2! We’ve reached the Celtic Sea and will be entering the English Channel later today. Today is our last day at sea, and the ride couldn’t have been smoother. Most days we couldn’t feel any motion at all!

A little good news?
While you need to consider your own personal risk factors before flying, it does appear that the risk of infection on aircraft is very low.
If you do need to fly, choose an airline that keeps middle seats open and requires masks. Open middle seats appear to reduce the risk of infection by 50%.

Most importantly, be smart in the airport itself, as that’s a more likely source of infection than the plane.

Planes have not been the sites of superspreading events, at least so far.

Here's an interesting piece by Joseph Allen, assistant professor of exposure assessment science at Harvard T.H. Chan School of Public Health and co-author of the book “Healthy Buildings.”

If the necessary precautions are taken, there is a path back to air travel.
