Visiting Bacolor is made more fun and interesting as we dwell on the localityโs very own food and delicacies. The town is for anyone who loves tasting traditional flavors of delicacies made with traditional ingredients. Pampanga is known to be the culinary capital of the Philippines but the locality of Bacolor is specifically known to be the โKakanin Production Centerโ. It is a home to some original Kakanin specialties here in Pampanga.
In the early 1800s, the kakanin industry began. On Wednesdays, when the farmers are preparing the fields for rice planting, snacks are delivered to them to keep them from going hungry while they rest. The homeowners were inspired to prepare more merienda dishes by the need to give diverse snacks to the farmers. As a result, Cabalantian delicacies were formed. The barrio was buried in lahar in 1991. The chefs were forced to leave and relocated to San Fernando, Mabalacat, and Magalang. They returned a few years later, and Cabalantian reclaimed its former grandeur as the kakanin production hub.
