Still reminiscing about my experience at - and also really hoping y’all go and see how amazing it is for yourself. But in the meantime, let me know which is your fav shot from the retreat. 🥰👇🏾

1 - the stunning semi-outdoor yoga/meditation room 🧘🏾‍♀️
2 - one of the most vibrant, healthiest breakfasts I’ve ever had 😋
3 - calligraphy time 🖋️
4 - 2nd floor wooden deck with the best 360° views 🤗
5 - I just couldn’t get over all the natural lighting lol 🙃
6 - my little Zen-inspired room for the night 😇
7 - because waking up extra early to catch sunrise is always worth it 🌄
8 - dinner the night before (all food free of animal products/wheat/oil/sugar) 🥢
9 - has Japanese cedar every looked so gorgeous? 😍
10 - loved these meditation chairs (yes, I actually did meditate, but had to get the shot too😅)

Shouting happy birthday to the love of my life and if you help me, I’d be so happy. Soooooo incredibly grateful to be back. I love Japan, but damn - being back home with you and Haru just feels right, you know? Thank you for all that you do for us and for always showing up - I appreciate and love you more than you know. ❤️

Here are my honest reviews of each bowl of ramen I tried at the Tokyo Ramen Festa in November.👇🏾

(1,2)🦀 blue crab tonkotsu ramen:
This was a game-changer – the crab infuses the pork bone broth with a subtle sweetness, and the chashu tied it all together. This was my first bowl and I already didn’t wanna stop eating. Besides, I’m a sucker for crab.😅

Beef tongue in ramen sounded adventurous, but this bowl was so nicely balanced. The beef was so soft and thinly sliced, complemented by a light, salt broth. Heartwarming without being heavy – this one was hard to forget.

This European twist to the classic Japanese dish left. me. speechless. Homemade noodles in a lobster and pork bone broth, elevated with Iberico pork chashu and a minced lobster ball. It was a harmonious blend of East meets West that was utterly memorable.

Kyoto duck meets Hokkaido kelp, and it’s a match made in umami heaven. The broth is light yet rich with flavor, but those noooooodles? They might’ve been my fav noodles there + the perfect vessel for this bangin’ broth!

Rightfully a Ramen Grand Prix winner, the chicken broth is deceptively rich, and the spicy minced chicken adds a fiery kick that’s bold, but not quite overpowering. And the noodles? just thick enough to stand up to the hearty, spicy broth.

📍 Train Street - Hanoi, Vietnam

Something so touristy, yet an amazing place to discover the unique city of Hanoi & Vietnamese culture, is Train Street.

Before going to Vietnam, I read online that Train Street was now closed for safety reasons. I was so glad when I spoke to a local and found out that you can still visit, just with new precautions in place. Whereas before you could freely walk down the street, you now have to wait at the entrance for someone from a cafe to come get you and es**rt you there. You can then hang around, enjoy your drink or food, experience the train coming through, and if you’re lucky, you’re able to walk across the tracks a bit and take some photos - although some people are stopped, for obvious safety reasons.

It's a bit unclear as to what to do at the moment, but my personal experience went well and I was able to spend a little time exploring and taking photos. I didn’t stick around for the train to come because there are only a couple each day and it wasn’t that important to me. But definitely worth the visit in my opinion! Grab a coffee, sit back, and watch the world pass by. ✧...

Coffee is a staple in many countries, but some countries have their own unique story behind coffee. Alongside Greece, Vietnam is one of the top countries that I enjoyed my coffee experience in.

And in Vietnam, I arguably had far too much coffee for one person. But when you’re in Vietnam, you drink coffee - it’s as simple as that. ☕️

Keep reading to learn 3 interesting facts about Vietnamese coffee!

1. Coffee was introduced to Vietnam by French colonizers and it's now actually the second largest coffee producer in the world after Brazil. Cool, huh?

2. During the French war, egg coffee was invented in response to a milk shortage. Yes, egg goes in the coffee! Almost more dessert-like, cà phê trứng is made with a sweet, thick, creamy layer of an egg yolk and condensed milk mixture on top of the rich, bitter coffee underneath. Though home to Hanoi, egg coffee can be enjoyed in cafes across the country!

3. In Vietnam, you’ll find lots of unique things - one being cà phê chồn or “weasel coffee”. What is weasel coffee, you ask? It’s a coffee made from coffee cherries eaten by civets, a small mammal resembling a weasel. They partially digest the beans and excrete the rest, which are recovered by farmers, thoroughly washed, and put through the roasting process. Because of the civet’s discerning taste when it comes to picking the perfect cherries to eat, weasel coffee is said to be of the finest quality, therefore is considered a specialty in Vietnam and a luxury throughout Southeast Asia. Now, before you head straight to judgement lane (if you’re not already there), try to keep an open mind and remember that we only think unfamiliar practices are strange because we’ve been socially conditioned to think that way. Unlearning these unconscious biases and retraining our minds to think beyond our traditional thinking patterns is vital in learning and growing in this world.

Built in the beginning of the 11th century on the ruins of an ancient temple, Panaghia Kapnikarea is one of the oldest churches in Athens. New Year’s Raspberry Moscow Mule Cake 🍰

Save this for your next holiday or celebration!

Ingredients

Cake:
- 1-1/2 cups of softened unsalted butter (3 sticks)
- 2 cups of sugar
- 5 large eggs (room temperature)
- 1 tbsp pure vanilla extract
- 3 cups cake flour or all-purpose flour
- 1/2 teaspoon salt
- 1 cup alcoholic raspberry ginger beer or ginger beer
- 2 cups of fresh raspberries

Syrup:
- 1/2 cup alcoholic raspberry ginger beer or ginger beer
- 1/3 cup sugar
- 1/4 cup lime juice

Glaze:
- 1 - 1.5 cup confectioners sugar
- 2-3 tbsp lime juice

Directions
1. In a large bowl, combine the softened butter and the sugar. Mix for a few minutes until light and creamy. Add in 1 egg at a time, mixing in between each egg. Add vanilla and mix until well-combined.
2. In a separate small bowl, whisk together the flour and salt. Add this to the creamed mixture alternatively with the ginger beer, making sure to beat it thoroughly after each addition. (Don’t over-mix it!)
3. Wash and pat raspberries dry and coat them with flour. Gently fold raspberries into the batter. Pour the batter into the prepared pan and bake at 325° for 75-85 minutes, depending on your oven. Bake until a toothpick inserted comes out clean.
4. Meanwhile, prepare the syrup and glaze. Syrup: in a pot, bring lime juice, ginger beer, and sugar to a boil. Turn the heat to low and simmer for 10-12 minutes. Glaze: mix the confectioners sugar and lime juice until it reaches your desired consistency.
5. After taking cake out of the oven, poke holes in it with a fork and using a spoon, drizzle the syrup all over the top of the cake. Cool for at 20 minutes before removing the cake from the pan. Cool completely. Drizzle glaze over the top and garnish with raspberries and fresh mint, if desired.
