Countdown to the holidays recipe number four: Cadbury Snowball cookies!
Recipe is from @cookingwithkarli
Ingredients:
- 1 cup (200 g) crushed cadbury mini eggs
- 1 cup (240 g) mini chocolate chips
- 1 cup (222 g) salted butter
- 1 cup (246 g) brown sugar
- 1/2 cup (115 g) granulated sugar
- 1 egg
- 1 tsp vanilla
- 2 cup (304 g) all-purpose flour
- 1/2 cup (50 g) rolled oats
- 1 tsp baking soda
- 1/2 tsp salt
Method
- Preheat the oven to 350° F (180°C).
- Measure out the crushed cadbury mini eggs and mini chocolate chips. Set aside.
- In the bowl of a stand mixer, cream together the butter and sugars until smooth, light in color and fluffy. This will take a few mintues.
- Scrape the sides of the bowl and mix in the egg add vanilla.
- Once completely combined, stop the mixer and add in the flour, rolled oats baking soda and salt.
- Start mixing slowly, once the flour mixture is about half way incorporated into the dough, pour the cadbury mini eggs and chocolate chips into the mixer and allow everything to mix together.
- Stop the mixer as soon as the flour is completely incorporated. Avoid over mixing.
- Measure out the dough into 1/3 cup portions of cookie dough for each cookie. Loosely gather the dough together in a tall ‘ball’ leaving the top jagged, for texture. Avoid packing the dough together tightly.
- Repeat this with all of the cookie dough.
- Bake at 350°F (180°C) for 13-15 minutes, or until the cookie dough has spread and the edges are turning golden brown.
- Immediately after taking the cookies out of the oven, use the back of a metal spoon and push the edges of the cookie towards the center, creating a perfect circle.
- Allow the cookies to cool on the pan for 20 minutes
- Serve warm and enjoy!

Countdown to the holidays recipe number two: Peppermint Bark!
Recipe inspired by Peppermint Bark Recipe - Sally’s Baking Addiction
Ingredients:
- One bag of white chocolate chips (mine was 11 oz)
- One bag of either semisweet or dark chocolate chips (mine was 10 oz)
- Some vegetable oil to help the chocolate melt
- Peppermint extract
- Half a bag of crushed up candy canes ( I used the pre crushed kind but I have individually crushed them up before)
Method
- Line a cookie sheet with parchment paper. The size is up to you depending on how thin or thick you want it.
- Using either a double boiler or microwave melt your white chocolate down with a little bit of vegetable oil. After it’s fully melted, add about a teaspoon of peppermint extract to the melted white chocolate. (It’s okay to eyeball this). Spread onto your prepared vessel. Place in the freezer for at least ten minutes to firm up.
- Melt the dark or semisweet chocolate chips using the same steps as with the white chocolate. Spread as evenly as you can onto the set white chocolate layer.
- Add your crushed up candy canes and place back into the freezer until set.
- Break up the pieces to whatever size you want and enjoy!
