TOLEDANA'S TRADITIONAL RECIPE
Ingredients (for 18 units):
- 165 gr lard
- 125 ml of sunflower oil (fried and cold)
- 125 ml white wine
- 2 teaspoon cinnamon
- 60 grams of sugar
- 500 gr flour
- 1/2 jar of quince jam (angel's hair)
- granulated almonds
- 1 beaten egg for painting
Preparation:
In a saucepan put the butter together with the oil, the wine, the cinnamon, and the sugar.
When it boils, add the flour all at once and stir until the dough comes off the walls of the pan (like choux pastry). Let it cool covered with plastic wrap.
Stretch between two sheets of baking paper and make circles with the help of a glass or a round pastry cutter.
Fill with a teaspoon of quice jam
Close, paint with beaten egg, and sprinkle with coarse almonds.
Bake at 180º for 25-30 minutes.
