Whilst our minds wander to festive hosting, there is still much to be enjoyed of the late-autumn garden produce. Warm hearty soups of creamy celeriac and roasted squash, and winter salads of sweet earthy beetroot, leafy greens and crunchy red cabbage.

Seasonal highlights on our Cotswold pub menus include game pate di campagna with celeriac remoulade at The Bell, Kuri squash with red Russian kale at The Wild Rabbit, celeriac and truffle risotto at The Fox and a Wootton estate venison duo with celeriac dauphine and kale at The Three Horseshoes.

Onion Soup with Welsh Rarebit, an autumnal recipe for you to try at home 🧅

The plentiful supply of apples enables us to make our own cider and Jez, head of the market garden is a particularly keen cider-brewer. This soup was inspired by our heritage apple orchard at the farm and is best enjoyed with its accompanying tangy, melting cheese on toast.

Each season brings new excitements, but autumn is one of our favourite times to bring the abundance of riches from the market garden onto our Cotswold pub menus.

A comforting bowl of baked heritage apple and foraged blackberry crumble. The gentle, warming flavours of root vegetables dug up from the ground. Tenderstem broccoli that has grown to new heights after a wet summer. Bright beetroot and squash in their myriad shades, shapes and sizes.

We invite you to try the new autumnal dishes across our pubs or cook your own seasonal feast in our self-catering cottages from the fresh produce available at our farmshop.

It’s feeling very much like autumn in the Cotswolds. To reflect the seasonal change, we’ve been hanging foraged foliage and wreaths, and trailing seasonal squash in each of our pubs.

September 🤎 Change is in the air as we find our way back to normal routine. Dappling fruit trees hang low ready for picking, and we’re enjoying lightly poached plums from our organic market garden.

We champion British produce and choose local suppliers that can demonstrate the highest welfare standards with the lowest environmental impact. Whilst we’re proud to follow organic practices throughout the seasons on our own farm, Organic September gives us all chance to refocus our efforts into nurturing our bodies with the food we choose and the soil in which it grows.

A month to cherish warmer days, tasting new produce and dining al fresco surrounded by summer blossoms.

We’re particularly pleased to see the first heritage tomatoes, crunchy cucumbers and of course the continued abundance of sweet strawberries from our market garden. 

Look out for these, and other seasonal fruit and veg as they become available in our farmshop and make their way onto our pubs’ summer menus.

Longer days, double-digit temperatures, and a flourish of colour on our plates; the arrival of summer in the Cotswolds is one of our favourite natural events, and throughout the year our menus evolve to feature the best of the season’s produce. 
 
We always look forward to seeing rows of strawberries out in our market garden on the cusp of ripening, with cucumbers and broad beans bulging in the warm climate of the polytunnels.

Springtime is all about new life and new beginnings, it is a time that we particularly appreciate at Daylesford as the farm slowly awakens after the long winter. Green shoots and fresh green buds start to appear. When the colour of the grass takes on a freshness, and it turns to beautiful bright green, you know that spring has arrived.
