Thanks to the biodiversity of the densely-forested Kochi prefecture, the local sushi here, known as “inaka sushi” (countryside sushi), is flavorful, colorful, and mainly plant-based. This cooking class offers a lesson in making Kochi prefecture’s traditional countryside sushi, but with a flavorful twist: tomato miso. An original product, this innovative flavor combination adds a sweet, bright, and subtly spicy heat to the area’s homegrown inaka sushi.

Okinawa Tour: Awamori Cave Expedition
Descend down into the only awamori cave in existence, where the potent Okinawan distilled alcohol is aged. Kin Town’s limestone caves happen to have the ideal conditions for maturing awamori, and they are also used to store tofuyo, an Okinawan fermented tofu delicacy. This Okinawa tour also includes a tour of an awamori distillery that’s housed in a renovated U.S. military aircraft hangar. You’ll also get to meet Asamu Toyokawa, whose entrepreneurial mother had the idea to use the limestone caves as a place to mature awamori, creating an attraction in the town that was once only known for its U.S. military presence. The tour also includes a tofuyo tasting and a lunch that highlights other Okinawan specialties.

Sail the vast waters of Miyagi Prefecture and join the Marine Sake Storage Voyage and Brewery Tour in Kesennuma! Hosted by Otokoyama Head Office Co., Ltd., visitors will have the opportunity to retrieve Japanese sake that has been fermenting under the deep blue sea.
Located in the port town of Kesennuma lies Otokoyama Sake Brewery, the first sake brewery to age sake underwater. Breweries at Otokoyama have been experimenting for years to find the perfect conditions for the nihonshu stored in the sea. For 6-12 months at about 15 meters deep, they found the nihonshu had the perfect balance while having subtle variations in its flavor. Each time there is a new haul of sake, excitement fills the air to try this type of rare aged sake.
This sake storage expedition starts at the Otokoyama Main Store. Here, visitors will have a chance to tour the brewery and prepare a bottle with a hand written message for sake storage. The bottle is given to the retrieval crew before visitors board a local fisherman’s boat and sail past oyster farms.
Once the treasure trove’s location is reached, the fisherman will haul up the last group’s batch of sake bottles located 15 meters below the sea level. After, the boat returns and a celebration commences at the Otokoyama Main Store. Enjoy a nice meal with Kesennuma specialities while tasting the aged sake!
Hike Scared Mountain with Yamabushi Mountain Ascetic and Try Ryori Shojin Cuisine
Meet bronze winner Dewa Shonai Area Co., Ltd. with their experience on the spiritual mountain culture of Japan. Explore the beauty of nature while hiking a sacred mountain with a Yamabushi (mountain ascetic) and try Shojin Ryori cuisine.
Dewa Sanzan, the “Three Mountains of Dewa” is a sacred site of Shugendo, Japanese nature worship. The “Journey of Rebirth” involves climbing all three mountains, which symbolize a different stage: Mt. Haguro represents the present; Mt. Gassan, the past; and Mt. Yudono, the future. For over 1,400 years, people from all over have tread the same path while completing the rituals along the way.
During the tour, you will join a Yamabushi monk on a hike up Mt. Haguro, the shortest and most accessible mountain of the three, consisting of 2,446 stone steps. Awarded three stars from the Michelin Green Guide, grasp the mountain’s beauty and admire the hundreds of cedar trees along with the brilliant five-story pagoda. Remember to take in the little subtleties, such as the carvings engraved onto the stones.
Taste the cuisine of Japanese monks, known as Shojin Ryori. This meal is a traditional Japanese vegetarian cuisine associated with Buddhism. It includes local vegetables, both from Dewa Sanzan and the surrounding region. Shojin Ryori has a wide variety of dishes, including “goma tofu”, known for its creamy and nutty flavor.
Take on this Journey to connect with nature and feel invigorated. The Shojin cuisine will not only replenish hikers from the day, but also allow them to experience the practices of Shugendo nature worship.
