Japan is a project that recognizes and promotes the best Japanese food experiences nationwide. Commissioned by the Ministry of Agriculture, Forestry, and Fisheries (MAFF), the project aims to encourage repeat visitors to Japan, providing an environment where foreign visitors can continue to have unique Japanese food experiences even after multiple visits to Japan. Ultimately, MAFF’s goal is to inc

rease the demand for Japanese food overseas and expand the exports of Japanese agricultural, forestry, and marine products. Japan held a contest to recognize the best local food experiences across Japan. Japan doesn’t solely revolve around eating. Japan winners for 2019 each showcase a different prefecture of Japan and its unique regional cuisine, along with cultural activities and insights. The panel of judges chose combination experiences where food is a window into subjects such as Japanese art, aesthetics, history, spirituality, travel, agriculture, and more. During the contest application period, from June to August 2019, there were a total of 167 entries. Of these, fourteen experiences were awarded prizes, and a ceremony was held for the winners on November 2nd, 2019. Not only were the winners awarded with increased promotion on booking platforms such as TripAdvisor and byFood, but they also received professionally produced promotional videos and mentoring from commercialization experts.

The process of making funazushi is fascinating - the fish is first gutted and salted, then pressed in barrels for up to three years. The result is a flavorful and tangy fish that pairs perfectly with rice or sake.

Not only is funazushi a delicious and unique treat, it’s also an important part of Shiga’s culinary heritage.

In 2011, the Great East Japan Earthquake devastated the town of Minamisanriku in Miyagi prefecture. Now, more than a decade later, the town is still working on recovery efforts. In this award-winning Eat! Meet! Japan experience, Shizuka and Cheesie met the people of Minamisanriku working hard on recovering the local gastronomic economy.

Shizuka and Cheesie go out on a boat to harvest local oysters, famous across Japan for their fresh taste. After the boat adventure, they explore the local winery and learn how to properly shuck oysters. The day ends with a meal of fresh oysters, paired wines, and a lovely meal of local ingredients.

It’s Shizuka in Shizuoka! Shizuoka prefecture is famous for its production of Japanese green tea, and accounts for over 40% of all the green tea grown in Japan. In this award-winning Eat! Meet! Japan experience, Shizuka learns all the secrets of Japanese tea production, and trains to become a tea master!

Shizuka undergoes tea master training from the experts, learning how to identify the differences in tea through touch, smell, and of course, taste! Using her new skills, she creates a special Shizuka blend tea. She also gets to make a nerikiri wagashi sweet to enjoy with a fresh bowl of matcha!

A program of food and culinary technique held in Yamagata Prefecture, targeting chefs from Michelin-starred restaurants from Belgium, Russia, England, Italy, Poland, etc. Visitors have a chance to learn how to use fermented foods, seasonings and ingredients unique to Japan (seaweed, citrus fruits), how to make soup stock, vegan dishes such as Shojin cuisine and how to fillet fish. Have you ever harvested wasabi? Our ambassador Shizuka gave it a try in Izu. Wasabi is a local specialty here and growing wasabi here has over 400 years of history. The high quality of the wasabi is achieved thanks to the fresh water flowing down from Mt.Amagi. After harvesting the fresh wasabi, Shizuka got to try freshly grated with sashimi and a wasabi hot pot. This experience is a great way to learn about wasabi, how difficult it is to grow it and finally taste it in various dishes.

Shizuka and Jesse explored the charming city of Matsumoto in Nagano prefecture. Famous for its original castle, Matsumoto is also well known for its production of miso, the fermented soybean paste. At Ishii Miso Factory that is run by the 6th generation miso maker Ishii-san, Shizuka and Jeese observed the step-by-step process of how miso is made. This staple of Japanese cuisine is essential for many types of Japanese food, especially for the preparation of miso soup. At the end, the two of them enjoyed a miso focused feast.

EMJ ambassador Jesse visited Fueki Soy Sauce Factory in Kawagoe, Saitama. The factory has been brewing soy sauce since 1789. Owner, Fueki-san, is incredibly passionate about soy sauce and enjoys teaching visitors about what goes into making it. In Gifu Prefecture, the Maze River is famous for its natural beauty and high-quality freshwater filled with ayu (local sweetfish). The sweetfish are caught using a traditional hiburi fishing technique. The ayu here are known for their delicious flavor and distinct aroma. It’s sweet and said to smell like watermelon!

Idyllic Yamaura Village in Nagano Prefecture is a perfect place for an authentic farm stay in Japan. During our stay, we learned how to make frozen tofu and kanten (agar-agar) and later use these traditional ingredients to cook authentic recipes with locals. It was a wonderful experience!
