The sleepy little sister of Lisbon, Porto feels on the brink of its big moment. Narrow townhouses seem stacked on top of one another, creative foodie joints run the spectrum from affordable bites (try the fresh fish at Restaurante Cafeina) to fine-dining powerhouses (Michelin-star Antiqvvm for its unusual carrot cheesecake with yuzu mousse), and smart boutique hotels owned by young creatives are packed with quirky design features. Wander the streets to see classic Portuguese tiling (at its best here) and street art. The wide Atlantic beaches are some of the best in Europe: a tram will get you to the oceanfront from the centre of downtown in less than 20 minutes.

You could happily spend days wandering through San Sebastián’s Old Town, breaking only for pitstops at the many pinxtos bars. Spot the best ones by the crowds outside – no one sits down, so join the locals and huddle around oak barrels for thimbles of beer or wine, and tapas. Ganbara does a brilliant toast piled with mushrooms and an oozing poached egg, and La Vina is a must-visit for the cheesecake. There are also an incredible 17 Michelin stars in this town; if you’re able to splash some cash stay at restaurant-with-rooms Akellare, or for a single blow-out supper head to Arzak.

Split’s polished marble streets and terracotta rooftops have sat for hundreds of years on a peninsula stretched over the sparkly Adriatic Sea. Founded by the Romans, the Old Town is inside the walls of fourth-century fortress Diocletian’s Palace. Along the shady, meandering, car-free streets, forward-thinking restaurants jostle for attention – try To Je Tako for fresh Mexican sharing plates. If you’re the spontaneous type, you can dive straight into the water from the city’s promenade. Croatia’s beaches are often rocky coves – head to Bene beach for soft sand.

As most of mainland Europe shivers, Portugal remains enviably mild: Lisbon’s average November temperature is 18°C. Of course, it’s not just the weather that makes this cobbled capital so alluring: now ranking among Europe’s coolest city breaks, it’s a hive of high-end but refreshingly affordable restaurants, raucous hole-in-the-wall bars and covetable concept stores (not to mention those cute, canary-yellow vintage trams). Make time to explore neighbourhood of the moment Cais do Sodré, a formerly sketchy part of town that now has a spruced-up riverfront promenade, cool warehouse conversions and fab food stalls at Time Out-curated Mercado da Ribeira.

While Tel Avivians are layering up by November, travellers from more northerly destinations will find themselves basking in shirt sleeves, if not swimwear, on the beaches and boulevards of this thrumming city, a direct medium-haul flight from the UK. Autumn peaks in October and November, when the forested Jerusalem Hills turn fiery red and orange, the desert blooms, and the harvest brings the best of the region’s glorious produce straight to the plates of some of the world’s most exciting restaurants.

November marks the beginning of Kerala's dry season and the end of the monsoons, which bring God’s Own Country bursting forth in verdant green, from its palm-lined lakes to the richly biodiverse slopes of the Western Ghats. This is India at its most chilled, its sandy shores quieter than those in Goa, and the scent of Ayurvedic oils in the air. Exploring is a hassle-free delight here – pootling around the backwaters by boat for an insight into local life, or hiring a motorbike to seek out new beaches, or putting up at homestays with families.

It might not quite be the “new Croatia” just yet, but that’s part of the appeal — this Balkan gem has so far managed to remain largely off-radar. There’s always some hardy adventurer ready to be first, though; in the unspoiled Albanian Alps, Brooklyn native Catherine and her Albanian partner run five-room farmhouse Hotel Rilindja, a cosy oasis amid peaks and meadows, where evenings bring feasts of spit-roasted whole goat and fresh reservoir trout. Or escape to the Albanian Riviera for glorious golden sands and clear, cobalt water lapping craggy coves. In summer, the beaches are packed with fugitives from Tirana — but come September they’re back at work, while the climate stays Mediterranean and the Adriatic keeps warm.

July and August are the busiest months in French Polynesia. Hold out until September and, as well as having more overwater bungalows to choose from, the weather’s still heaven. No heavy rains until November; none of the later months’ humidity to force on the air-con. Just blue, blue lagoons and the kind of peace you only find at the end of the world. Though it’s the very picture of paradise, locals call Bora Bora “boring boring”. For a quick culture dose, head out of your resort and visit the pearl farms of quiet Taha’a, or meet the blue-eyed, giant sacred river eels of lush Huahine (but maybe leave it to your guide to feed them).

Though Austria’s capital is better known for grand imperial palaces and an even grander musical legacy (Mozart and Beethoven), one of the city’s finest assets is its urban vineyards. Forget a designated driver, just take the tram to the pretty outer suburbs, where rows of vines spread across grassy slopes, as skyline views and the Danube stretch out below. October marks the harvest, when the vineyards are at their greenest and winemakers open up their operations to enquiring minds (and mouths). There are several designated wine trails to follow, where vintners hand out samples from both cellar and kitchen, and autumn’s mild, sunny days are ideally suited to frolics in the fields.

The nation's capital has a lot going for it. Fill your days with visits to iconic landmarks like the Lincoln Memorial and the Washington Monument. Plus, the city's plethora of Smithsonian museums gives you plenty to do on rainy or hot days. When the weather cooperates, explore some of D.C.'s green spaces, such as the U.S. National Arboretum and Rock Creek Park. A stroll along the Georgetown waterfront is also a relaxing way to spend an afternoon. And don't forget to check out the city's lively restaurant and bar scene in areas like the U Street and H Street corridors.

In Grand Teton National Park, Wyoming's snow-topped Teton Mountains rub elbows with the Snake River, Jackson and Jenny lakes, wildflower fields, swamps and more. Trekking to scenic vistas like Inspiration Point and Phelps Lake Overlook are common ways to take in the park's natural beauty, but if you're looking to exert less energy, explore the region by car or boat. Don't focus too much on the horizon, though, as moose, elk, bears and bison all call the park home and occasionally wander near visitors.

Nicknamed the Garden Island, Kauai relies on its immense natural beauty to stand out from other Hawaiian Islands. To drive this point home, Kauai limits the size of all of its buildings to no taller than a coconut palm so locals and travelers can enjoy excellent views from the island's pristine beaches. Visitors will also discover lush areas like Koke'e State Park and Wailua River State Park when they venture inland. Kauai's distance from the mainland and abundance of high-end hotels make it a pricey destination to visit, so book your flights and accommodations well in advance.

Oahu features a nice balance of urban and beach environments. And with pleasant weather year-round, there really is no wrong time to visit this Hawaiian paradise. Waikiki Beach promises to please, but be forewarned: There's a good chance a barrage of tourists will greet you. For extra elbow room, head to more secluded options like Waimanalo Bay Beach Park and Kalama Park. Before leaving, carve out some time for visiting Honolulu naval sights like the Pearl Harbor National Memorial and the Battleship Missouri Memorial.

Awe-inspiring panoramas are available everywhere you turn in Utah's Zion National Park. For some of the best views, hikers recommend trekking the Angels Landing trail, which is full of challenging switchbacks and thrilling heights. Other traveler favorites include the easy Pa'rus Trail and the more challenging Narrows, which takes hikers through the narrowest section of Zion Canyon. No visit would be complete without going canyoneering, which combines rappelling with swimming and hiking.
