My love and I had been engaged for five years, but the time never seemed right to get married. In Essaouira, Morocco, we made it official. After two weeks of touring, hiking, and eating, we decided the time and place were perfect. Rashida, a local guide, took us to a silver shop to buy wedding rings, lent me her traditional dress, and gifted me a mother-of-pearl pendant. Mohammed, our tour guide, presented a beautiful bouquet of white roses for me to carry. Just before sunset, 15 of our new friends gathered in the courtyard of the riad to walk to the beach for the ceremony, and one of them officiated. We celebrated at a rooftop restaurant, where we all danced to lively Berber music as the sun melted into the sea. The security man at the restaurant presented us with matching silver necklaces and heart pendants that fit together. New York Style Pizza This New York style pizza is the famous real deal with it’s homemade dough that makes a thin and crispy crust, a quick homemade tomato sauce, and mozzarella cheese. Toppings optional.

Here’s how to make it at home.

For the pizza dough
16 ounces bread flour* (about 3 3/4 cups), plus more for dusting
1 tablespoon granulated sugar
2 teaspoons kosher salt
1/2 teaspoon active dry yeast
1 1/4 cups ice water
1 tablespoon vegetable oil, plus more for the work surface and bowl
For the pizza sauce
One (28-ounce) can whole peeled tomatoes, undrained
2 medium garlic cloves, minced
1 teaspoon kosher salt
1 teaspoon dried oregano
1/4 teaspoon red pepper flakes, or more, to taste
1/2 teaspoon dried basil
1/2 teaspoon granulated sugar

For the New York style pizza
1/4 cup semolina flour
All-purpose flour, for dusting
8 ounces ounces low-moisture whole-milk mozzarella, or more, shredded

DIRECTIONS
Make the pizza dough
In a large food processor, pulse together the bread flour, sugar, salt, and yeast until well combined.
In a liquid measuring cup, combine the ice water and 1 tablespoon of vegetable oil and, with the machine running, slowly drizzle the mixture in through the feed tube until a ball of sticky dough forms, 20 to 30 seconds.
Transfer to an oiled work surface and knead until smooth, 2 to 4 minutes. Transfer to an oiled bowl, cover with plastic wrap, and refrigerate overnight before using.
Make the pizza sauce
In a food processor, combine the tomatoes and their juices, garlic, salt, oregano, red pepper flakes, basil, and sugar. Process until smooth.
Assemble the New York style pizza
Divide the chilled dough into 2 equal pieces. Wrap individually in plastic wrap and let rest at room temperature for 1 hour.
While the dough is resting, set an oven rack in the second highest position and place a pizza stone on it. Preheat the oven to 550°F (288°C) or the highest setting for 1 hour. Dust a pizza peel with half the semolina flour.
☞ TESTER TIP: If you don’t have a pizza peel, an overturned baking sheet will work nicely in its place. If you don’t have a pizza stone, you can assemble and cook the pizza on a heavy rimmed baking sheet.
Generously dust a work surface with all-purpose flour and place one piece of the dough on top. Pressing gently with your fingertips, push the dough out to form an 8-inch (20-cm) round, leaving the edge slightly thicker.
Pick up the round of dough and drape it over your knuckles, letting gravity stretch it. Pass the dough hand over hand until you have about a 14-inch (35-cm) round. Transfer the dough to the prepared pizza peel and reshape it into a circle, if necessary, leaving the edge slightly thicker.
Depending on how saucy you like your pizza, ladle 1/2 to 3/4 cup of the pizza sauce onto the dough and spread until evenly coated, making sure to leave a 1/2-inch (12-mm) border exposed.
Scatter half the mozzarella over the sauce. Slide the pizza onto the preheated pizza stone and bake until the crust is well browned and the cheese is bubbling and browned in spots, 10 to 12 minutes.
Using the pizza peel, transfer the pie to a large cutting board or pizza pan.
Repeat with the remaining dough, sauce, and cheese to make a second pizza.
Slice each pizza into about 8 wedges and devour.

Authentic New Orleans Style Gumbo

This Authentic New Orleans Gumbo is made with a dark roux, vegetables, chicken, sausage, and shrimp, and served over rice.

Ingredients
For the Roux:
1 heaping cup all-purpose flour
2/3 cup oil (vegetable or canola oil)
For the Gumbo:
1 bunch celery , diced, leaves and all
1 green bell pepper , diced
1 large yellow onion , diced
1 bunch green onion , finely chopped
1 bunch fresh parsley leaves , finely chopped
2-3 cloves garlic
1-2 Tablespoons cajun seasoning *
6-8 cups Chicken broth *
12 ounce package andouille sausages , sliced into 'coins' (substitute Polska Kielbasa if you can't find a good Andouille)
Meat from 1 Rotisserie Chicken*
2 cups Shrimps , pre cooked
cooked white rice for serving
Instructions
Make the Roux*: In a large, heavy bottom stock pot combine flour and oil. Cook on medium-low heat, stirring constantly for 30-45 minutes. This part takes patience--when it's finished it should be as dark as chocolate and have a soft, "cookie dough" like consistency. Be careful not to let it burn! Feel free to add a little more flour or oil as needed to reach this consistency.
Brown the sausage. In a separate skillet on medium-high heat place the sausage slices in one layer in the pan. Brown them well on one side (2-3 minutes) and then use a fork to flip each over onto the other side to brown. Remove to a plate.
Cook the vegetables in broth. Add 1/2 cup of the chicken broth to the hot skillet that had the sausage to deglaze the pan. Pour the broth and drippings into your large soup pot.
Add remaining 5 1/2 cups of chicken broth. Add veggies, parsley, and roux to the pot and stir well.
Bring to a boil over medium heat and boil for 5-7 minutes, or until the vegetables are slightly tender. (Skim off any foam that may rise to the top of the pot.) Stir in cajun seasoning, to taste.
Add meat. Add chicken, sausage, and shrimp.
Taste and serve. At this point taste it and add more seasonings to your liking--salt, pepper, chicken bullion paste, garlic, more Joe's stuff or more chicken broth--until you reach the perfect flavor. When I arrived at my hotel in Negril, I was greeted by a sweet-spirited woman who led me to my cottage. On the way, we stopped to pick an orange, which she peeled in one single spiral. She then set the delicious, juicy fruit in the palm of my hand. Inside my cottage, the bed was covered with red blossoms and a gentle breeze hinted at the sea just across the road. I woke up with the roosters each morning and walked along the road while the vendors were setting up for the day. A local taxi driver offered to take me to beautiful secret spots, but I told him my budget wouldn’t allow it. After a few days of running into him, I let him drive me to a beautiful beach near a shipwreck. I fell asleep on a thick tree branch that reached across a lazy river and ended the day on a cliff high above the sea. The next day, I ventured into sugarcane fields and made friends with a multi-generational family who led me on a donkey up the hillsides to share the view. By the end of the day, the grandfather was holding my hand and asking me to choose the spot where he should build my little house. Stepping Out Of A Comfort Zone In Dubai

One day, I was scrolling through a Facebook group when I spotted a post claiming $200 roundtrip tickets to Dubai. As is routine in that group, I confirmed the deal, checked my calendar, and booked tickets – no asking friends, no waiting for job approvals, and no overthinking. It would be my first trip alone.
I met Jibri during the layover. She got my attention and started chatting about travel deals and groups. During our small talk, I considered putting my earphones back in or making up a reason to excuse myself. Instead, I decided to embrace a new person and see where it could lead.
Not only did we exchange contact information to meet-up in Dubai, but we joined other travel group members who rented out a yacht for an afternoon cruise along the Persian Gulf.
It was totally outside of my comfort zone and totally what my comfort zone needed – to be stretched out of shape! I met amazing people and forged exciting friendships.
Dubai was life-changing. I learned to trust my abilities and instincts even when I had to improvise. I learned that strangers are just friends who haven’t met you. Most importantly, I learned that my suitcase was much lighter when I didn’t fill it with fear.
This year, I took a solo trip to Thailand and it was the absolute best. More solo trips are in my future as I continue to challenge myself to get uncomfortable and do more than I thought I could.

Have you ever wanted to have dinner under the sea? The Houston Aquarium is not only a great place to see some amazing sea creatures, but a place to dine with them as well!
