O’Fish’ial headed south to team up with Captain Tim and his incredible crew aboard the Royal Star. We departed from San Diego and headed off the coast of Mexico for one of the most amazing fishing experiences you could imagine. Yes, we got lucky on some amazing fishing however the crew, food, and the F/V Royal Star are next level. Thank you Captain Tim, Duke, Michael, Jackson, and Diego for making it an amazing experience!

Asteria crew has been crushing it! Contrary to popular belief, it’s not a 6 pack boat that catches fish..It’s the knowledge of the Captain that puts you on the fish. Great job Captain Aaron! Making memories for 10 anglers a day… day after day after day.

🍢✨ Grilled Salmon Skewers with Creamy Dill Yogurt Sauce ✨🍢

These Grilled Salmon Skewers with Creamy Dill Yogurt Sauce are a perfect combination of smoky grilled salmon and a refreshing yogurt sauce. Ideal for a summer BBQ or a healthy dinner option!

Ingredients:

For the Salmon Skewers:
1.5 lbs salmon fillets, cut into 1-inch cubes
2 tablespoons olive oil
1 tablespoon lemon juice
2 teaspoons fresh dill, chopped
Salt and pepper, to taste
Wooden or metal skewers

For the Creamy Dill Yogurt Sauce:
1 cup Greek yogurt
2 tablespoons fresh dill, chopped
1 tablespoon lemon juice
1 garlic clove, minced
Salt and pepper, to taste

Instructions:

Prepare the Skewers:

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
In a bowl, combine the salmon cubes with olive oil, lemon juice, dill, salt, and pepper. Toss to coat evenly.

Skewer the Salmon:

Thread the salmon cubes onto the skewers, leaving a little space between each piece to ensure even cooking.

Grill the Salmon:

Preheat the grill to medium-high heat.
Place the skewers on the grill and cook for about 3-4 minutes per side, or until the salmon is opaque and flakes easily with a fork.

Prepare the Dill Yogurt Sauce:

In a small bowl, mix together the Greek yogurt, dill, lemon juice, minced garlic, salt, and pepper until well combined.
Taste and adjust the seasoning as needed.

Serve:

Arrange the grilled salmon skewers on a serving platter.
Drizzle the creamy dill yogurt sauce over the skewers or serve it on the side for dipping.
Garnish with extra fresh dill if desired.

Tips:
Marinate: For more flavor, marinate the salmon cubes in the olive oil, lemon juice, dill, salt, and pepper mixture for about 15-30 minutes before grilling.
Serve With: These skewers are great served with a side of grilled vegetables or a fresh salad.
