I finally perfected this loaf by mixing two flours. Third time's a charm. If anyone wants this recipe, it's in the America's Test Kitchen Bread book and it's for American Sandwich Bread. If you want to try it just message me and I'll send it to you with my adjustments. Instead of using just bread flour, I did a 50/50 split of Bread flour and Italian flour. This gave me a much nuttier, creamier flavor but retained the loft that I got from just using bread flour. In fact, I got so much loft using bread flour alone that it fell just a little. This came out perfect. It's not a bread I will make very often but it's a good loaf to have in my repertoire. The bread I will be working on next is called Anadama bread and is a yeasted corn bread. Seems like a good choice for Fall and I think it will make an incredible stuffing for a turkey.🍞πŸ₯–πŸ’›πŸ’›β

I love that I found this sign outside the entrance to the 7th/Metro transit station. I have lived in LA since 2008 but I never fell in love until I became a transit user. No matter how much I loved my work, my friends, the weather, the other benefits of a coastal urban life, none of that could mitigate the stress caused by traffic, freeways and the cost of maintaining a car. This past weekend I traveled from South Pasadena to Santa Monica and Venice Beach.
I used light rail, also paid for an Uber XL to help me cart home two chairs I bought at Home Goods and I didn't spend as much as half a tank of gas! This is LOVE!!!! πŸšŒπŸš‹πŸšŠπŸšˆπŸ›€οΈπŸ’™πŸ’šβ

Today I made the same bread as before but I used the recommended bread flour. It rose higher but it also fell. I think I may have let it rise for too long. Yesterday's loaf was completely delicious in spite of the fact it didn't rise very high. It was cooked completely through to the center and had a nice medium density crumb. It was great last night when it was fresh and it was great this morning toasted with a fried egg. Again, I have to let this one rest for 3 hours before diving in so I will let you know how it goes. I'll be taking a week off from baking to visit my sister but when I get back I think I will try this same recipe again with a mixture of the bread flour and the Italian flour. There is also a whole wheat variation on this recipe so I've got that to look forward to as well.🍞πŸ₯–πŸ’›πŸ’›β

I've always been very good at cooking. Once you have the basics down, it's really just improvisation and having a palate that allows me to taste nuances in flavor. Baking, however, is an exact science. You can't really play around with bread unless you really know what you're doing. I've always wanted to work on my baking skills but it's hard to do, first of all when you are married to someone who is gluten intolerant, second of all when you divorce the gluten intolerant guy and live all by yourself. This is not the time to be making large amounts of carb-based foods. Then I moved in with housemates in Flagstaff. Where the 7,000 ft altitude required endless adjustments and never really quite gave me the results I wanted. Now that I am living in South Pasadena at 659 ft above sea level, with someone who can eat gluten, who can eat carbs and can take the leftovers to share with his coworkers, I am starting to bake with precision, method and dedication. This loaf is supposed to be American sandwich bread. It is one of the few recipes in my new bread book that I had all the ingredients and equipment for. Although I did not have the specific bread flour that they called for. This was made with an Italian flour and it did not rise as high as expected. But the crust feels very good and the loaf itself is light. I thought it might be denser. I have not tasted it yet, as the book recommends letting it rest for 3 hours before cutting into it. Tomorrow I will make the same loaf again with proper bread flour. I will let you know later how this one tastes and how tomorrow's loaf goes.
