VegiVentures Peru Tour 27 April 2016. Main Square, Taquile Island, approx 13,000 ft above sea level in the middle of Lake Titicaca on the terrace of locals' co-operative cafe. We had just revived ourselves with a cup of coca-leaf tea.

By special request, that VegiVentures humous recipe:

Humous
250g chickpeas, soaked over-night in cold water
1 lemon, juiced
1tbs tahini
2tbs olive oil
1 clove garlic, crushed
salt
ume-su (red plum seasoning)
kombu (sea vegetable)

1. Drain chickpeas. Cover with cold water, add a 2” piece of kombu and boil for 2 hours or pressure cook for 1 hour. Allow to cool.
2. Drain the chickpeas, reserving the cooking liquid.
3. Blend the chickpeas in a food processor with 3 tbsp of cooking liquid and the other ingredients, adding salt and ume-su to taste.
4. Add more cooking liquid, if necessary, to adjust the consistency. Re-blend.
5. Serve with pitta bread or vegetable pieces.

Makes 8 portions

Hello greetings from Cochin in Kerala, the land of spices and delicious dosas, appam and ootapam (all types of pancake made with a fermented rice and dhal batter. No eggs. Usually served with fresh coconut 'chutney'). I'm busy setting up VegiVentures' first tour of South India. Of course it's a paradise for vegetarians, but trying to guarantee no 'ghee' in the food for strict vegans (we'll have 2 in our group) is tricky. Ghee, like the cow, is simply part of the culture. The updated Vegan Passport from the UK Vegan Society is proving really useful, as it has pages in Malayalam and Tamil. It works; on reading it local folk begin to understand. Putting this understanding into practice is, of course, another story... foodie photos will follow...
