She is fluent in Spanish, Portuguese, English, and German and has training as a translator. Her knowledge of cheesemaking and gastronomy will ensure that you get the best information and enjoy your tour.

Do you know this dish? It’s a Francesinha. A sandwich original from Porto it is made with layers of toasted bread and assorted hot meats such as roast, steak, wet-cured ham, linguiça, or chipolata over which sliced cheese is melted by the ladling of a near-boiling tomato-and-beer sauce called molho de francesinha.

Tobias Rijnsdorp is the cheesemaker and social entrepreneur behind Hola Andes, a cheesemaking company working in Monquentiva, Colombia. They make a gouda-style cheese using milk from cows living in the Andes.

He will join our tour to help us understand how social projects in Latin America can benefit from European expertise. Tobias would help translate from hist native Dutch to Spanish.

Every tour we organize we include a visit for a cheese cellar or maturation room. These visits are important to understand how cheesemongers are part of the process of affinage and we need them to ensure the product arrives in the best way to the consumer.

We were thrilled to visit the iconic store in Paris and got to see their underground cellar.
