You are staying in a fort! It has been really well converted and the public rooms are just magnificent. The bedroom we had was clean and comfortable with just the most wonderful tile decoration. The breakfast and dinner buffets were good, if a little limited on the second day we were there. Service generally excellent, although table service at the bar was a little slow, but you can always order at the bar. The hotel has a lovely courtyard with a pool.’’

“ Excellent food in a historic gorgeous environment “

“Over a few visits have tried different dishes. Without fail, they are all good! The lamb is tender, the brik cooked perfectly, the harissa smoky and the couscous far more interesting than the usual fare served elsewhere.

You can call ahead and choose one of the 4 course menus to make your meal faster (they'll start prepping in advance).

Open at 7pm so if you eat earlier then try to hold off until then.

The setting is an old family home inside the medina. Original tile, beautifully done beds on the sides, as the traditional homes are made. The owner'sfamily lived here for generations and they'll show you around if there in that evening.

The medina's souk quarter was built mainly in the 17th and 18th centuries and is still occupied by the traditional craftsmen of Kairouan. It's an interesting place to poke about, even if you're not a shopper, as you can see many of the craftsmen busy at work in their workshops. To reach the souk, head down Rue Ali Belhaouane. After passing the El Bey Mosque on your right and the El Maalek Mosque on your left, Bab el Tounès (Tunis Gate) comes into sight. The souk streets all ramble off from here.

one of the oldest buildings in Kairouan, the Mosque of the Three Doors (Mosquée des Trois Portes or Djemaa Tleta Bibane) was founded in AD 866 by an Andalusian scholar. Its most notable feature is the facade with three doorways, from which it takes its name. There are two friezes of Kufic inscriptions, the lower of which dates to 1440. The minaret also dates from this year. Non-Muslims cannot enter this mosque, but you're mostly here to see the famed front façade anyway.

One of Kairouan's major points of interest, the Great Mosque stands in the northeast corner of the Medina, its massive minaret incorporated into the town walls. This is the oldest and most important Islamic building in North Africa and was originally built by Uqba ibn Nafi, the Arab commander who founded Kairouan in AD 672. Many of Tunisia's other major mosques took their inspiration from Kairouan's Great Mosque architecture.
The mosque covers a mammoth area, 135 meters long by 80 meters wide, with a vast inner courtyard surrounded on three sides by double-aisled colonnades of antique columns. Non-Muslims are not allowed to enter the prayer hall, but the doors are often kept open, so you can have a peek inside.

To the north of the medina, beyond the Avenue de la République, are the Aghlabid Basins that supplied water for the Aghlabid palace, which once sat on the site of Kairouan's present-day cemetery. The water was brought by aqueduct from Djebel Cherichera, 36 kilometers away. The smaller basin was a settling tank from which the water flowed to the larger one that had a capacity of 50,000 cubic meters. In the center of the larger pool is the base of a pavilion, where the Aghlabid rulers used to relax. The pools were restored in 1969, and another pool has been discovered just to the west.

One of the major architectural significance of the Arab invasion of North Africa was the construction of massive and often magnificent mosques constructed around military style courtyards along the court coast of the Mediterranean. In 670 CE, conquering general Sidi Okba constructed a Friday Mosque in what was becoming Kairouan in modern day Tunisia. A Friday Mosque is used for communal prayers on the Muslim holy day, Friday. Known as the Great Mosque of Kairouan, it is an early example of a hypostyle mosque that also reflects how pre-Islamic and eastern Islamic art and motifs were incorporated into the religious architecture of Islamic North Africa. The mosque contains a large prayer hall, a dome, an arcaded courtyard and three story tower believed to be the oldest in the world. Bordering the courtyard are the horseshoe shaped arches that are one of the characteristics of Islamic architecture, supported by Corinthian columns that trace their stylistic origin back to Ancient Greek temples.

Delve into the medina through a monumental gate, between the displays of the little merchants of the souks. Explore the alleyways fringed by white façades and pale blue doors; and feel the timeless atmosphere. Climb the crenelated walls that surround the old town, and discover a constellation of white domes across the city. Stroll through the souks where the stalls compete with each other to display the most beautiful carpets, the pride of the city. During your stroll, step into the small building topped with a dome which protects a well they call Barrouta, extremely old and revered in local beliefs. Inside an antique system of wheels and buckets, powered by the circular motion of a camel, draws the water. Leave the old town and visit the Aghlabid Basins: in the 19th century, these vast reservoirs of water were part of an immense hydraulic system, exceptional at the time.

Kairouan has always been a place popular with travellers, whether here for trade or the purposes of religious pilgrimage. Considered the fourth-holiest site in Islam because of the presence of the Great Mosque (the oldest in North Africa), it feels worlds away from the sybaritic beach resorts to its east.

The Unesco-listed medina is an interesting and beautiful place to wander, especially in the late afternoon when the sun creates shadows, highlighting the charming and ornate doors, and the blue-and-green window shutters and balconies. Filled with shops, traditional courtyard houses, mosques and zaouias (complexes surrounding the tomb of a saint), it's the city's heart in every sense, and amply rewards those who spend time within its walls.
