Figgy Black Forest Bacon Burger
This is a juicy burger featuring sweet and smoky flavors. The best part? Everything cooks in the same skillet for maximum flavor. So go ahead…give the grill the night off.
Yield: 4 burgers
INGREDIENTS
Burger seasoning
2 tsp. TJ onion powder
2 tsp. TJ kosher salt
1 tsp. TJ freshly ground black pepper
1 package TJ brioche burger buns
4 Tbsp. TJ Fig Butter, divided
1 package TJ Black Forest bacon
1 medium sweet yellow onion, thinly sliced and lightly seasoned with kosher salt
1 package TJ 80/20 Ground beef burger patties, COLD from refrigerator
1 package TJ Port Salut cheese, divided into 4 portions
PREPARATION
Mix together onion powder, salt and freshly ground black pepper with mini whisk in small bowl and set aside. Toast brioche buns in toaster and spread 1/2 Tbsp of fig butter on each bun half. Set aside. Slice Port Salut cheese into 4 portions and set aside. Slice onion into thin slices and set aside.
Heat large cast iron skillet (or nonstick skillet) or use two skillets that will accommodate 9 slices of bacon over medium heat. Add black forest bacon and fry until browned. Remove bacon from skillet and set aside, reserving 2 Tbsp. of bacon grease in skillet(s). Add sliced onions, lightly season with kosher salt, and cook until onions are caramelized (medium to dark brown in color), about 12-15 minutes. Remove onions from skillet and set aside. Remove burgers straight from the refrigerator, COLD, and rub a generous amount of burger seasoning on each side of burger ( using all of the seasoning on the 4 burgers). Add burgers to already hot skillet. You might be able to cook all 4 burgers in the skillet depending on the size of your skillet(s). Cook to 5 degrees shy of desired doneness. When almost done, top with Port Salut cheese and cover with lid for 1 minute to melt the cheese. Remove burgers from skillet and let stand, undisturbed, for 5 minutes, on a plate (this is the secret to a juicy burger!)
BURGER ASSEMBLY
Place cheese-topped burger on top of bun already spread with fig butter, Add 2 slices of bacon, then the caramelized onions, and then the top brioche bun. Enjoy.
