Much to my surprise a meditation studio is just a couple miles from my house and tonight I enjoyed a relaxing sound bath.

And because it’s in Little Italy, afterwards I enjoyed a delicious gelato!

Miraval Resort Vacation = Miravalous!

Oh Italy, say it hasn’t already been a year since I was enjoying a boat cruise around the Amalfi Coast and savoring lunch, limoncello cocktails and the island of Capri! One of my best days ever!

Time sure has flown by and I miss you every day!

I can’t wait until we are able to visit your beautiful country again. As soon as allowed I’ll definitely be planning my next trip.

Not even home 24 hours and I’ve already put what I learned at Austin with into action.

Delicious and healthy Blackberry Peach Smoothie (slightly modified):

1 cup unsweetened vanilla almond milk
3/4 cup frozen peaches
1/4 cup frozen blackberries
1/4+ cup frozen riced cauliflower
Large handful of fresh spinach
1 pitted date and 1 tbsp honey (natural sweetness)
1 tbsp maca powder
1 tbsp collagen peptides

Blend and enjoy. Yum!

Last dinner at Miraval Austin Resort & Spa in Austin so I had to get a little resort fancy in my Yellowcake Shop dress.

My stay ended with Cocktails in the Kitchen where we sipped on a tasty Charred Pineapple Crush Tequila cocktail followed by a dinner where I dined with four lovely and very friendly ladies I met in my class from Dallas.

I love going to new places and meeting new people. They will definitely be ones that I will fondly remember.

Took a few hours to just soak in the pool after four days of being open and soaking it all in.

My last night before I jet it back north. I’d highly recommend a experience. It’s an incredibly thoughtful one.

A day of traveling brought me to a beautifully serene destination. Tonight I explored the grounds, took in a beautiful Texas sunset and ate a delicious dinner.

Now, with the comfiest robe on, I’m laying in the softest bed. Yeah, I’ll sleep good tonight.

Day of adventure, pampering and relaxation tomorrow!

Almost a year ago to the day I was sipping on Prosecco at the airport just before boarding a plane to Italy. I was beyond excited. The world and travel was so different then. Almost carefree compared to today.

Tomorrow I will board a plane again for the first time in about a year. This time it will be different. I know it’s a risk, but I’m prepared and will be cautious. There will be no Prosecco, and no Italy. Instead a mask, lots of sanitizing wipes, hand washing and distance.

Still excited but a bit anxious too. Yeah, so very different.

My lunch today took me back to Ravello, Italy with Caseificio Staiano Biagio and our Buffalo Mozzarella making class.

It definitely isn’t as fresh as what I enjoyed there, but ever since that day I spend a little extra on the Buffalo Mozzarella because it’s definitely worth it.

Time spent making cheese with Biagio in his family’s Latteria is definitely worth it as well.

Once able to travel back to Italy I would highly recommend a visit to the Amalfi coast and a cheese making lesson in Ravello!

Have you ever happened upon something that made you stop, admire and wonder?

That happened to me here on a walking tour near Trastevere. We came across this magnificent doorway and I found myself wondering what it might look like behind the teal door, who lived there, who took care of that luscious greenery above the doorway, and what the view was like from one of those windows.
