Would wintery weather ever stop you from having fun?

had the privilege to host an amazing group of guests from the USA, showing them the depth and variety of wine-fuelled experiences on offer in the Margaret River region.

There were tall trees, rivers filled with “silver”, iconic wines, fine dining, genuine farm-to-plate and vineyard-to-glass experiences, cute animals, incredible artisan craft, more delicious wines, rainbows and much laughter and chatter!

A true honour to see our niche experiential travel company between some of the nation’s most incredible locations, operators, highly anticipated hotel openings and world-heritage-listed icons.

We couldn't be prouder to carry the flag for Tourism Western Australia, particularly Australia's South West and little hidden gem of Southern Forests - Valleys.

Yes, there’s been a little bit of time here between posts. That’s with good reason. Our Co-founder, has been on the road and in the skies for the past month. The reason? Wine, of course! 🍷

She’s just finished up in Napa as a fellow at the with some of the world’s greatest wine writing minds and hearts.

Next stop…Pemberton via Margaret River. That’s right. The change in season means two things are coming soon: black truffles and Pinot noir.

We have three dates for our winter experience in 2023. June, July and August. But get in quick, as spaces are limited.

Our recent lunch by Chef Mel was a stunning affair, complete with a journey through Margaret River’s wine region via the glass thanks to .merchants and wines.

What do we have on our plates?

🍽️ tempura courgette flower, goats cheese, tomato, saffron, lemon

🍽️Mel’s “fish + chips”. Anchovy mayonnaise, preserved lemon, parsley, capers

🍽️lamb shoulder, almond cream, shallot, broccolini, bronze fennel

🍽️blue cheese cream, Nannup peach, honey, cracker

A throwback to a private wine and dining experience curated for a couple of VIP guests a few weeks back.

After a stroll through the vines, Dylan from .merchants and hosted a comparison tasting of several Margaret River wines to give vinous context to our guests from overseas. And then of course, there was the lunch prepared by Chef Mel. Who wants to see what was served?

We've shared our Christmas lunch plans below and hopefully all of the dishes turn out! Mixing up the white and red wine a little as the day will be a long one and there's likely a swim or two between courses.

🍾 To start - Bubbles of course. Leaning towards Champagne, however likely a bottle of West Aussie too.

🥂 Salmon gravlax with buckwheat blinis - a serious, savoury, and textural Rosé. and are contenders.

🍷 Mixed charcuterie - Tossing up between a fresh and fruity Beaujolais or a peppery and light Schiava.

🥂 Crab ravioli - An aged bottle of 's Sauvage is at the ready.

🥂 Whole baked fish with grilled summer veggies - Chardonnay of course! There are so many Margaret River Chardonnays on the shelf. Which to pick?

🍷 Cheeses - A light to medium bodied Grenache or mid-bodied Pinot Noir. Maybe a cheeky Sangiovese because there's always room for more Italians at the table.

🍾 Baked Basque cheesecake - Muscat.

This five-day retreat, named ‘Pemberton’s Earthly Delights’, focuses on truffles, pinot noir and local produce including honey, apples, trout and marron. There's no questioning the star of the trip though: the black Périgord truffle.

The Australian Financial Review published these evocative words from journalist Carolyn Beasley who joined us for our 2022 August trip:

“….Our exclusive-use residence for the week is , in the middle of the truffle farm. It’s an elegant manor, and my generous suite features soaring ceilings and a four-poster bed. There’s a balcony too, and from it, I spend the early mornings watching misty, forested mountains reflected in Stonebarn’s lake.”

Amid the oaks, I spy Dion Rangé (the owner of Stonebarn Trufflerie & Lodge) and Hazel unearthing truffles, which may, by tomorrow night, be shaved atop a meal in France.

The fruiting body of the fungi is the black Périgord truffle, the most prized cultivated truffle in the world, and this region produces over 90 per cent of Australia’s. Adding to their international appeal, Aussie truffles ripen in our winter, when European truffles are off the menu.

….Dining is a long-table affair, and Kokoti usually appears brandishing a whole truffle, which she liberally shaves onto everything. The aromas unleashed are intoxicating; gourmet mushroom, nutty soil and oak.

Turns out, truffles can enhance all the Pemberton produce we’re feasting on; scrambled eggs, pickled ocean trout, marron and slow-cooked beef cheek. They can even be piled within a honeycomb cheesecake. Who knew?”

Our Pick 'n Sip guests put some elbow grease into harvesting Sav Blanc on the first day of vintage 22 with Dylan and the crew at 💪 The result?

"A new wine to the Hoi Polloi range, introducing our white blend. Comprised of fruit we grow on the Treeton estate property. 85% Sauvignon Blanc and 15% Chenin Blanc. It has been created as a perfect, simple, wine that goes as well by itself as it does with food."

Budburst. 🌱 Have you heard of it? If you engage with any wineries here on socials, you’ve probably seen them posting photos and talking about it recently. But what IS budburst? 🤷‍♀️

It’s a sign that the vines are in action after sitting dormant through winter. When the weather warms up enough and the vine is ready to wake up, the first signs of growth appear and the next vintage begins.

It’s an exciting time, not least because it heralds the warmer months that await and the all possibilities that a new vintage can bring! Aka, great wines that can be made. And tasted 😎🍷

From Hazel and Dougie the truffle hunting labradors, Flash the wine dog, through to our own sausage Nettie, whose business duties are questionable. 🤔 Maybe she'll be able to learn a few truffle hunting tips next year and get put to work in Pemberton! 🤣

West Aussies have turned to Ray Jordan's Wine Guide as a trusty source for the best wines of the west for many years now, and his Top 100 Reds guide is much anticipated by wine lovers huddled by winter fireplaces in need of a good bottle to crack open and warm up with.
