When visiting Trinidad check out our fresh food markets, where history and tastiness meet.

From mangoes brought over because of colonisation and imported labourers centuries ago to locally grown hot peppers, these markets were where I spent many early Saturday mornings (before 6 a.m.) because my parent insisted on getting the freshest ingredients.

Needless to say, I was not pleased but as an adult, I enjoy early Saturday mornings at the market.

Doubles are more than just a street food. They’re a symbol of Trinidad & Tobago’s rich history!

Rooted in the traditions of indentured labourers who were brought from India, this iconic street food, made with fried bread, chickpeas, and flavourful sauces, has become the heart of our local flavours.

As a child, I had to get one from a vendor who sold just outside my school. This was when I got familiar with pepper sauce!

Indigenous cooking style mixed with discarded food scraps.

Trinidad & Tobago's pastelles are a very popular food item at Christmas time.

They are very similar to Venezuela's hallacas and Puerto Rico's pasteles. They are delicious mix of meats with olives and capers steamed in a cornmeal dough and wrapped in banana leaves.

Paselles combine the cooking methods of the indigenous peoples (eg., the use of cornmeal) and the scraps of food discarded by the slave masters (such as meat, olives and capers) and used by the African slaves to make this dish for their own Christmas dinner.

A "healthy" dessert?

Trinidad's cassava pone is an indigenous snack/dessert made with cassava, coconut, pumpkin, sugar, and various spices.

It's very tasty. It has a texture similar to bread pudding.

I'm very happy to live in a country where "real food" is the absolute norm!
