Saratoga Springs, my home for the next few days. This one bedroom villa sleeps up to five people, has a full kitchen and washer and dryer in every unit, it also has a dining table with two chairs and a bench seat. The living area has a large size couch and a very comfortable Murphy style queen bed versus a pull out couch, there is also a pull down twin bed under the tv. The bedroom has a king size bed with carpeting which gives it a nice homey feel. There is a full size shower and also a nice large bathtub to soak in after a long park day. All villas at this resort offer a patio or balcony to enjoy your morning coffee!

Cucina del Capitano, what a great choice to end our wonderful and relaxing vacation! I chose Nona’s Meatball for my appetizer and Chicken Parmesan for my main course, the marinara sauce was the BEST I have ever had! For dessert a Frozen Lemon Tarte with Marscarpone and Roasted Blueberries! Simply amazing!

Finally made it to “Chibang” it was totally worth the wait! My husband had a Carnitas Bowl and Churro Y Hilado for dessert, I had a Spicy Steak Stir Fry and Cream Caramel for dessert. Delicious! Best of all, it’s complimentary for lunch and dinner with two different menus to try!

Our first port, Roatán the largest of Honduras’ bay islands, it was once home to over 5000 Pirates!🏴‍☠️
Roatán is also ringed by the second world’s largest coral reef the Mesoamerican reef. We really enjoy swimming at this beautiful beach in Mahogany Bay!
