Myself on Food & Wine!

Last year I managed to persuade Mr Matt Gross, a journalist from the prestigious Food and Wine magazine to pick Danang over other big beach cities as a base for his article on snails. With my help, Mr Gross had many interesting adventures in Danang ranging from sneaking (with permission) into the kitchen of a local seafood restaurant to learn their recipes, to sailing overnight with the fishermen, and eventually cooking with me in my lab kitchen as I showed him how to make some seafood dishes that I created for Nén Restaurant

As seafood is my absolute favorite and the main focus of many dishes at Nen, it was such an exciting experience for me to showcase what our beautiful beach has to offer and also acquired a great deal of new knowledge that I didn’t expect.

Did you know tea used to be so expensive that people had to lock it up in a box to prevent theft?

I learnt a great deal about the art of tea making today from a Taiwanese in Iris Restaurant here in . This huge 4-floor restaurant that looks like a hotel is actually dedicated to everything tea related!

New series to kick off the new year: Feel free to ask if you are curious about how I make any of the dishes. Even though I cook free style at home most of the time, I could share the general steps.

Last night I made these gorgeous chicken wings in a free style hot sauce. Super crispy skin even after being coated in all those thick sauce. The sauce was very spicy per my husband’s request, however it was the kind of spicy that only warms up the lining of your mouth, not your tongue. I don’t like spicy food that burn my tongue, so this dish was perfect!

KAISEKI

Kaiseki is the ultimate Japanese fine dining experience where a wide range of techniques and skills are displayed. I’ve wanted to try it for so long and finally did on this trip.

Following one of your recommendations (arigatou!!), I made a last-minute reservation for a last-order lunch course at 2:30pm at Kitazuien restaurant and luckily got through.

Got there right on time and was immediately shown to our table. It is a beautiful restaurant located on the whole floor of the building with a small garden in front.

How to get there: it’s on the 3rd floor of a building a few steps from Nishi Umeda Station exit 9. You should remember the restaurant name’s kanji characters as its signage in front of the building does not have a latin translation.

Let me tell you about my dinner tonight while recovering from it 😂

wasn’t on my to-eat list this trip but my god it’s freezing here tonight (2* celsius) i had to put some noodle soup in my system ( ). So I let my husband pick a place and went with it.

He did an awesome job! But it’s not the ramen that i was crazy about. It was the !!!!! And the !!!!!(ramen egg - had to order separately as topping - marked in a photo below)

Imagine dipping perfectly thick noodles in a perfectly flavorful thick soup and then clear your palate with a bite of mildly sweet egg. Just out of this world!

Of course the ramen bowl was wonderful. Thin, perfectly balanced soup, unlike some other types of ramen which are either too salty, too fat or too thick. It was a delight to eat.

It was so good I had to go home and am now resting from indigestion. , literally!

Ok let’s face it, I’m a big fan. I had a fair share of this fun yummy snack back when I was a uni student in Kyushyu and each time I come back to Japan it’s always on top of the list.

Takoyaki is an iconic representative of Osaka so it wouldn’t make sense if I don’t eat it first during this trip.

This time I found this small eatery by chance while surfing the Osaka Michelin guide. It’s the only takoyaki restaurant that is included in the guide so I thought I would give it a try.

The shop is located in a small alley in a quiet neighborhood about 800m from Namba station. Theres are only 6 seats inside but everything is so well designed and organized. They are famous for their cheese salt takoyaki so I gave it a try. It looked very impressive and mouth watering. I love it when the cheese melted and coated the octopus balls. I also tried their standard takoyaki with sauce and mayonnaise which was super yum. However the highlight was the amazing wasabi takoyaki. I didn’t expect such an intense kick in this familiar snack.

Takoyaki is usually sold on the street as takeaway. To be able to actually sit down and enjoy it as a proper meal felt so different and great. The atmosphere was very peaceful with calm music. Loved this place so much!

Got to my airbnb apartment at midnight last night and of course couldn’t resist getting a bowl of at on the way to warm myself up as it was freezing at night. Heaven! #牛すじ (beef tendon) and egg have always been my favorite. What about yours?

I’ve been soooo excited since some parts of the new national project was completed. From you can easily drive >200 kilometers to Quang Ngai city in less than 2 hours! I know this is such normal thing in developed countries, but being able to do that in Vietnam it feels AMAZING!

On Monday I did an impromptu trip to Quang Ngai and had a chance to try their beautiful food that I’d never paid much attention to before due to lack of access. It’s a small city south of Danang and still pretty raw. It felt like transporting to the 90s Vietnam landscapes. !

There I randomly checked out a jam packed restaurant that serves 2 rice dishes: one with tiny clams (cơm hến) and one with bbq pork ribs (cơm sườn). My gosh they were good! I wholeheartedly prefer the Quảng Ngãi version of cơm hến to the Huế version because there’s so much more rice and clams you can bury your face in it! 😂

I’m sure this little restaurant will continue to feed me well during my future trips to explore smaller cities via the new high way.
