A Philippines speciality... 🇵🇭

🌭 There are many types of Longanisa sausage (often very sweet) found all over the Philippines, but in my opinion, no longanisa comes quite as close as the one found in Vigan. 🤯

🧐 i was determined to find a local producer of this special Filipino speciality in Vigan and was so lucky enough to be able to spend a morning with these skillful producers who generously taught me their processes; from grinding the meat and fat to adding the seasonings including the local garlic - and I even learned to stuff and tie the sausages by hand in the uniquely vigan way. The end product happened to be one of the single best things that I have eaten in the Philippines! VIGAN LONGANISA 🥰
